Description

Korean Strawberry Milk is a refreshing and delightful beverage that combines fresh strawberries and creamy coconut milk sweetened with a natural sugar alternative. This quick and easy recipe delivers a vibrant pink drink with both puréed and chunky strawberry textures, garnished with fresh mint for a burst of color and flavor—perfect for a light treat or a summer refreshment.

Ingredients

Strawberry Mixture

  • 16 medium fresh strawberries, washed, hulled and divided
  • 1/2 tablespoon raw cane sugar replacement (such as Lakanto Golden)
  • 1 to 2 tablespoons water (optional)

Milk Mixture

  • 1 cup chilled coconut milk
  • 2 tablespoons raw cane sugar replacement (such as Lakanto Golden)

Garnish

  • 2 fresh strawberries with leaves for garnish
  • Fresh mint leaves

Instructions

  1. Prepare Strawberries: Thoroughly wash and gently pat dry the fresh strawberries. Remove the hulls, then chop them into pieces. Divide the chopped strawberries equally into two separate containers.
  2. Make Strawberry Purée: Transfer the chopped strawberries from one container into a blender. Add 1/2 tablespoon of the sugar replacement. Optionally, add 1 to 2 tablespoons of water to help blend. Pulse the blender until the strawberries are slightly puréed, maintaining some texture.
  3. Assemble Strawberry Base: Pour the puréed strawberries equally into two glasses. Then divide the remaining chopped strawberries into the glasses for added texture.
  4. Prepare Coconut Milk Mixture: Clean the blender if necessary, then add the chilled coconut milk and 2 tablespoons of the sugar replacement. Pulse the blender until the mixture is well-combined and frothy.
  5. Combine and Garnish: Pour the frothy coconut milk mixture evenly over the strawberries in each glass. For garnish, make a small incision at the bottom center of each fresh strawberry without removing the leaves, and place it on the rim of each glass. Add fresh mint leaves to complete the presentation. Serve immediately and enjoy.

Notes

  • Use fresh, ripe strawberries for the best flavor and natural sweetness.
  • The sugar replacement can be adjusted according to taste preference or substituted with other natural sweeteners.
  • Adding water while blending the strawberries is optional but helps achieve the desired purée consistency.
  • Chilled coconut milk helps keep the drink refreshing; refrigerate it beforehand.
  • This recipe is naturally dairy-free and vegan-friendly.
