Description

These delicious Lasagna Roll Ups transform traditional lasagna into an easy-to-serve, portable, and visually appealing meal. Tender lasagna noodles are filled with a flavorful mixture of ricotta, mozzarella, parmesan, and fresh parsley, then rolled up with a savory ground beef marinara sauce. Baked until bubbly and topped with golden melted cheese, this recipe is perfect for family dinners or entertaining guests.

Ingredients

Pasta

  • 12 lasagna noodles (cooked to package instructions)

Meat Sauce

  • 16 oz ground beef (85% lean)
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano

Cheese Mixture

  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese (shredded)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup parsley (chopped, plus more for garnish)

Instructions

  1. Cook the noodles: Preheat the oven to 375˚F. Cook lasagna noodles in a large pot of salted boiling water according to package instructions until al dente. Drain noodles and immediately transfer them to a pot filled with cold water to halt cooking and prevent sticking.
  2. Prepare the meat sauce: In a deep pan or Dutch oven over medium-high heat, cook ground beef until no longer pink, breaking it up with a spatula, about 2 minutes. Add diced onion and continue cooking until softened, about 3 minutes. Stir in minced garlic, sea salt, black pepper, and dried oregano; sauté for 1 more minute. Pour in marinara sauce and bring to a simmer. Remove from heat. Spread 1/2 cup of this meat sauce evenly on the bottom of a casserole dish.
  3. Make the cheese filling: In a large bowl, combine ricotta cheese, egg, parmesan cheese, 1 1/2 cups mozzarella, and chopped parsley. Stir until well incorporated.
  4. Assemble the roll ups: Lay cooked noodles flat on a large baking sheet. Spread about 1/4 cup of the cheese mixture evenly over each noodle. Spoon a heaping tablespoon of meat sauce along the center of each noodle. Roll each noodle up tightly and arrange the rolls seam-side down in the prepared casserole dish.
  5. Add topping: Spread the remaining meat sauce evenly over the top of the roll ups. Sprinkle the remaining 1 1/2 cups mozzarella cheese over the sauce. Cover the dish with foil, being careful not to let the foil touch the cheese (use toothpicks to keep foil elevated if needed).
  6. Bake and broil: Bake covered at 375˚F for 40 minutes. Remove the foil and broil for 2-3 minutes or until the cheese on top is bubbly and lightly golden. Garnish with additional chopped parsley before serving.

Notes

  • Cooking the noodles al dente prevents them from becoming mushy during baking.
  • Using toothpicks to hold the foil away from the cheese helps avoid sticking and preserves the cheese’s texture.
  • For a vegetarian version, substitute the ground beef with mushrooms, lentils, or a plant-based meat alternative.
  • Allow the lasagna roll ups to rest for 5-10 minutes after baking for easier slicing and serving.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
