Description

Loaded Sheet Pan Nachos are a quick and delicious party favorite, combining seasoned ground beef, black beans, corn, olives, and a melty Mexican cheese blend on a crispy bed of corn chips. Topped with fresh tomato, onion, jalapeño, and cilantro, and served with sour cream, these nachos are perfect for gatherings or a satisfying snack in just 15 minutes.

Ingredients

Beef Mixture

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 (1.25-oz) package taco seasoning
  • 1 (16-oz) jar salsa

Nacho Base and Toppings

  • 1 (12-oz) bag corn chips
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (8.5-oz) can corn, drained
  • 1 small can sliced black olives, drained
  • 1.5 cups shredded Mexican cheese blend
  • 1 Roma tomato, diced
  • 1 small red onion, diced
  • 1 jalapeno, thinly sliced
  • 1 handful fresh cilantro
  • Sour cream, for serving

Instructions

  1. Prep the Oven and Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly spray with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Brown the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring frequently, until it is fully browned. Drain any excess fat if desired. Stir in the taco seasoning and the jar of salsa, mixing well to coat the beef with the flavors.
  3. Assemble the Nachos: Spread the corn chips in a single layer on the prepared baking sheet. Evenly distribute the seasoned ground beef mixture over the chips, then layer on the black beans, corn, sliced olives, and shredded Mexican cheese blend.
  4. Bake the Nachos: Place the baking sheet in the preheated oven and bake for 5 to 6 minutes until everything is heated through and the cheese is melted and bubbly.
  5. Add Fresh Toppings and Serve: Remove the nachos from the oven and immediately top with diced Roma tomato, diced red onion, sliced jalapeno, and fresh cilantro. Serve warm with a side of sour cream for dipping or topping.

Notes

  • For a spicier version, add extra jalapeno or a dash of hot sauce to the beef mixture.
  • Substitute ground turkey or chicken for ground beef for a lighter option.
  • Use gluten-free corn chips to make the dish gluten-free.
  • Customize toppings with avocado, green onions, or pickled jalapeños for extra flavor.
  • Leftovers can be reheated in the oven for best results to keep the chips crispy.
