Ingredients
Fruits and Vegetables
- 2 medium fresh ripe mangoes
- 1 small habanero pepper
Pantry Ingredients
- 3 tablespoons white cane vinegar
- 3 tablespoons granulated sugar
- 1/4 teaspoon granulated garlic
- 1/4 teaspoon kosher salt
- 1 to 2 tablespoons water (optional, for consistency adjustment)
Instructions
- Prepare the Habanero Pepper: Wear food-grade hand gloves for safety. Wash the habanero pepper thoroughly and pat dry with a paper towel. Carefully dice the pepper into small pieces, taking care to avoid contact with skin or eyes.
- Blend Ingredients: In a personal blender, combine the white cane vinegar, peeled and chopped ripe mangoes, diced habanero pepper, granulated garlic, and kosher salt. Blend the mixture for 2 to 3 minutes until it becomes smooth and creamy.
- Cook the Sauce: Transfer the blended mango-habanero mixture to a small saucepan. Stir in the granulated sugar to incorporate well.
- Heat and Thicken: Heat the saucepan over medium heat until the mixture reaches 248°F (120°C) and just begins to boil. Immediately reduce the heat to maintain a gentle simmer at 140°F (60°C). Continuously stir the sauce for 10 to 12 minutes, until it slightly thickens to your desired consistency.
- Cool and Store: Remove the saucepan from heat and allow the sauce to cool to room temperature. Transfer the cooled Mango Habanero Sauce into an airtight jar. Serve immediately or refrigerate for later use.
Notes
- Wear gloves while handling habanero peppers to avoid skin irritation and accidental contact with eyes.
- Adjust the amount of habanero pepper depending on your preferred spice level.
- You can add 1 to 2 tablespoons of water if the sauce is too thick during blending or cooking.
- This sauce pairs excellently with grilled meats, seafood, and as a dipping sauce for snacks.
- Store the sauce in the refrigerator and consume within 2 weeks for best freshness.
