Description
A smooth and creamy Hong Kong style mango pudding made with fresh ripe mangoes, evaporated milk, and gelatin. This dessert is perfect for a refreshing treat and sets beautifully to a soft, wobbly texture that's rich yet light.
Ingredients
Gelatin Mixture
- 100 g cold water
- 2 tablespoons gelatin powder
Mango Mixture
- 450 g fresh, ripe mangoes (peeled and cut into pieces, about 2 large mangoes)
- 350 g evaporated milk (plus extra for serving)
- 100 g granulated sugar
Instructions
- Bloom the gelatin: In a small bowl, add the cold water and sprinkle gelatin powder over the surface. Let it sit for 5 minutes until the gelatin absorbs the water and becomes a gel-like consistency.
- Prepare the mango purée: Blend the peeled and cut mangoes in a blender until smooth. For fibrous or stringy mangoes, strain the purée through a fine mesh sieve to ensure a silky texture.
- Combine ingredients: Pour the mango purée into a small pot, then add the evaporated milk and granulated sugar. Stir thoroughly to combine all ingredients evenly.
- Add gelatin to the mixture: Incorporate the bloomed gelatin into the pot with the mango mixture, stirring to mix well before heating.
- Dissolve the gelatin: Warm the mixture on low to medium heat on the stovetop, stirring occasionally. Heat just enough to fully dissolve the gelatin but do not let it boil, as boiling can prevent the pudding from setting properly.
- Cool and set: Remove the pot from heat and let the mixture cool slightly. Pour it into serving cups or bowls.
- Chill: Refrigerate the pudding cups for at least 4 hours or overnight until fully set and firm.
- Serve: Garnish with additional fresh mango chunks and a drizzle of evaporated milk before serving for an enhanced flavor and creamy finish.
Notes
- Use ripe mangoes for best sweetness and flavor.
- Do not boil the mango mixture to avoid ruining the gelatin’s ability to set.
- You can substitute gelatin with agar-agar for a vegetarian alternative, but setting time and texture may vary.
- Ensure the pudding is completely chilled for the ideal jelly-like softness.
- Extra evaporated milk adds creaminess when serving but is optional.
