Ingredients
Casserole Mixture
- 1 (10.5 ounce) can cream of chicken soup
- ½ cup cottage cheese
- ½ cup sour cream
- 4 ounces cream cheese, at room temperature
- 1 ½ teaspoons Creole seasoning
- ½ teaspoon onion powder
- 1 teaspoon garlic powder, divided
- 5 cups shredded rotisserie chicken
- 1 tablespoon chopped fresh parsley
Topping
- 30 buttery round crackers (such as Ritz), crushed
- 4 tablespoons unsalted butter, melted
- 1 cup shredded mozzarella cheese
- 1 teaspoon sliced scallions, or to taste
Instructions
- Preheat Oven: Preheat the oven to 350 degrees F (175 degrees C) to prepare for baking the casserole.
- Mix Creamy Base: In a medium bowl, stir together the cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and ½ teaspoon garlic powder until the mixture is smooth and well blended.
- Combine Chicken: Fold the shredded rotisserie chicken and chopped fresh parsley into the creamy mixture until the chicken is evenly coated.
- Prepare Topping: In a separate medium bowl, mix the crushed buttery crackers, melted butter, and the remaining ½ teaspoon of garlic powder to make the topping.
- Assemble Casserole: Spoon the chicken mixture evenly into a 9-inch square (or 11x7 inch) baking dish. Sprinkle the shredded mozzarella cheese evenly over the top, then cover with the cracker mixture.
- Bake: Place the baking dish on a foil-lined baking sheet to catch any drips. Bake in the preheated oven for about 35 minutes, or until the cracker topping is golden brown and the edges of the casserole are bubbly.
- Garnish and Serve: Remove from oven and garnish with sliced scallions to taste. Serve warm as is or with a side salad or noodles.
Notes
- This casserole can be frozen for up to 4 months; thaw overnight or up to 6 hours in the refrigerator before reheating in the oven according to the original baking instructions.
- For different flavor profiles, substitute the rotisserie chicken with flavored varieties such as mojo, lemon pepper, or garlic rotisserie chicken.
- You may use any crisp butter crackers as a substitute for Ritz to adjust texture and taste slightly.
