Description

Delight in these festive Mint Chocolate Chip Rice Krispie Treats, combining the classic chewy texture of Rice Krispies with cool peppermint flavor and mini chocolate chips. Perfect for holiday gatherings or a sweet minty snack, these treats are easy to prepare in under 15 minutes and yield 16 delicious squares.

Ingredients

Main Ingredients

  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops of liquid coloring)
  • 3/4 cup mini chocolate chips

Instructions

  1. Prepare the bowl: Grease a large mixing bowl with butter or spray it with cooking spray to prevent sticking.
  2. Set the cereal aside: Pour the Rice Krispies Cereal into the greased bowl and set it aside.
  3. Melt the butter: In a medium-large saucepan over low heat, begin melting the butter carefully.
  4. Add marshmallows: Add the marshmallows to the melted butter and stir to coat them evenly.
  5. Heat marshmallows: Continue heating the mixture, stirring occasionally, until about three-quarters of the marshmallows have melted.
  6. Finish melting marshmallows: Remove the pan from heat and keep stirring, smashing the marshmallows until all are completely melted and smooth.
  7. Add flavor and color: Stir in the peppermint extract and approximately 10 drops of green food coloring to give the mixture a minty flavor and festive look.
  8. Combine marshmallows and cereal: Pour the melted marshmallow mixture over the Rice Krispies Cereal and toss well to coat every piece.
  9. Cool slightly: Let the mixture cool for 5 to 8 minutes until it feels cool to the touch but still pliable.
  10. Add chocolate chips: Reserve about 3 tablespoons of mini chocolate chips for topping, and toss the rest into the coated cereal, stirring until evenly mixed.
  11. Press into pan: Spread the mixture evenly into a well-buttered 8-inch pan, pressing gently.
  12. Add topping: Sprinkle the reserved mini chocolate chips over the top and press them into the treats firmly using the back of a rubber spatula or spoon.
  13. Cool and set: Allow the treats to cool at room temperature for at least 30 minutes to firm up.
  14. Serve: Remove from the pan and cut into 16 squares for serving.

Notes

  • Use salted butter for enhanced flavor or unsalted if preferred; adjust added salt accordingly.
  • Green food coloring is optional; the treats taste great without it.
  • Press the treats firmly into the pan for best texture and easier cutting.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • To make it vegan, substitute marshmallows with vegan marshmallows and butter with vegan butter.
