Description

Delicious no-bake white chocolate cheesecakes featuring a buttery Walkers Shortbread Gingerbread Men crust, creamy white chocolate-infused filling, and a warm, spiced mulled wine fruit topping. This elegant dessert combines rich, smooth textures with festive flavors, perfect for holiday gatherings or special occasions.

Ingredients

Crust

  • 2 (4.4 oz) packages Walkers Shortbread Gingerbread Men, plus more for garnish
  • ½ cup butter, melted

Cheesecake Filling

  • 8 ounces white chocolate
  • 2 (8 oz) packages cream cheese, room temperature
  • 1 ½ cups powdered sugar
  • 2 teaspoons vanilla bean paste or extract
  • Zest from one orange
  • 1 tablespoon orange juice
  • 2 cups heavy cream

Mulled Wine Fruit

  • 2 ½ cups mixed berries (blackberries, raspberries, cherries)
  • ¼ cup red wine or cranberry juice
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon cardamom
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon ginger
  • Pinch of salt
  • Zest from one orange
  • Juice from one orange

Garnish (Optional)

  • Whipped cream
  • Sugared cranberries
  • Thyme or rosemary sprigs

Instructions

  1. Prepare the crust: Add the Walkers Shortbread Gingerbread Men cookies to a food processor and pulse until they become fine crumbs. Pour the crumbs into a bowl, then add the melted butter. Mix thoroughly until the mixture resembles wet sand. Set this crust mixture aside for assembly.
  2. Melt the white chocolate: Using a double boiler setup, gently melt the white chocolate over simmering water. Stir occasionally until smooth, then remove and let it cool to room temperature.
  3. Make the cheesecake base: In the bowl of a stand mixer, combine the cream cheese, powdered sugar, vanilla bean paste, orange zest, and orange juice. Beat on medium speed for about 3 minutes until the mixture is smooth and creamy, scraping down the bowl as needed. Gradually add the cooled melted white chocolate and mix until incorporated. Transfer this mixture to a large mixing bowl.
  4. Whip the cream: In the same bowl, add the heavy cream and whip it until stiff peaks form. This will ensure a light and airy filling.
  5. Combine mixtures: Fold one-third of the whipped cream gently into the cream cheese mixture to lighten it. Then carefully fold in the remaining whipped cream until the filling is well combined and smooth.
  6. Prepare mulled wine fruit: Place the mixed berries, red wine or cranberry juice, sugar, cinnamon, cardamom, nutmeg, ginger, salt, orange zest, and orange juice into a small saucepan. Cover with a lid and cook over medium-low heat for 5 to 10 minutes, or until the fruit releases its juices and softens slightly. Remove from heat and allow to cool.
  7. Assemble the cheesecakes: Spoon 2 to 3 tablespoons of the gingerbread cookie crust into the bottom of serving glasses or jars. Then spoon or pipe the cheesecake filling over the crust layer. Cover loosely with plastic wrap and chill in the refrigerator for at least 4 hours or preferably overnight to set properly.
  8. Serve and garnish: When ready to serve, top each cheesecake with a spoonful of the cooled mulled wine fruit. Add optional garnishes such as whipped cream, a whole Walkers Shortbread Gingerbread Man cookie, sugared cranberries, and fresh thyme or rosemary sprigs for a festive presentation.

Notes

  • Use room temperature cream cheese to ensure a smooth filling without lumps.
  • The mulled wine fruit can be made a day ahead and refrigerated, which allows flavors to meld.
  • Do not overheat the white chocolate or it may seize; melt gently and cool before mixing.
  • For a non-alcoholic version, substitute the red wine with cranberry juice.
  • Chilling overnight improves texture and flavor balance.
  • Adjust the sweetness in the mulled fruit by adding more or less sugar to taste.
