Description

A delicious and easy one-pan meal featuring tender chicken thighs cooked in a bold honey BBQ sauce alongside perfectly simmered long-grain white rice. This recipe requires just 30 minutes and minimal cleanup, making it perfect for a quick weeknight dinner packed with flavor.

Ingredients

Chicken and Rice

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tbsp olive oil

Instructions

  1. Heat oil: In a large skillet over medium heat, add 1 tablespoon of olive oil and allow it to warm up properly to ensure a nice sear on the chicken.
  2. Cook chicken: Add the chicken pieces to the hot skillet and cook for 5–7 minutes, turning occasionally, until browned on both sides and mostly cooked through.
  3. Toast rice: Push the cooked chicken pieces to one side of the skillet and add the uncooked long-grain white rice. Stir and toast the rice in the skillet for 1–2 minutes until slightly fragrant.
  4. Add liquids: Pour in 2 cups of low-sodium chicken broth and 1/2 cup of honey BBQ sauce. Stir gently to combine the rice, chicken, and sauce evenly.
  5. Simmer covered: Cover the skillet with a lid and reduce heat to low. Let the mixture simmer for 20 minutes, allowing the rice to absorb the liquid and become tender.
  6. Rest covered: After cooking, remove the skillet from heat but keep it covered. Let it sit for 5 minutes to finish steaming and absorb flavors fully.
  7. Serve: Fluff the rice with a fork, slice the chicken into serving pieces, and serve the dish hot and saucy straight from the skillet.

Notes

  • Use chicken thighs for juicier, more flavorful results, but chicken breasts work well too.
  • Adjust the amount of honey BBQ sauce to your taste preference for sweetness and spice level.
  • You can substitute white rice with brown rice; however, cooking time and liquid may need adjustment.
  • For a gluten-free option, ensure the BBQ sauce is gluten-free.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
