Ingredients
Chicken
- 2 tablespoons oil
- 3 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 1/2 teaspoons Italian seasoning
Rice Mixture
- 3 cloves garlic, minced
- 1 cup long grain white rice
- 1 teaspoon turmeric
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried dill
- Juice of 1 lemon
- 1 (10.5 oz) can cream of chicken soup
- 2 cups chicken broth
Garnish
- Lemon slices
- Fresh parsley and/or basil
Instructions
- Season Chicken: Generously season the chicken breasts on all sides with salt, pepper, and 1 1/2 teaspoons of Italian seasoning to infuse great flavor.
- Heat Oil: Heat 2 tablespoons of oil over medium heat in a skillet until shimmering, preparing the pan for sautéing.
- Sauté Chicken: Add the chicken breasts to the hot skillet and sauté for about 3 minutes on each side, browning the exterior while keeping the inside pink and undercooked. Remove chicken and set aside.
- Caramelize Rice and Aromatics: In the same skillet with pan drippings and any remaining oil, add minced garlic, rice, turmeric, 1 teaspoon Italian seasoning, and dried dill. Sauté the mixture for 30 seconds to 1 minute, stirring continuously to avoid burning and allowing the rice to gain a toasted flavor.
- Deglaze Pan: Pour the lemon juice into the skillet to deglaze, loosening tasty browned bits from the bottom. Stir in the chicken broth and cream of chicken soup until the mixture is well combined and smooth.
- Simmer: Bring the rice and soup mixture to a simmer over medium heat, uncovered. Once simmering, nestle the chicken breasts on top of the rice mixture.
- Cook Covered: Cover the skillet and let everything cook together at a gentle simmer for 15 minutes, or until the rice is tender and the chicken is fully cooked through.
- Garnish and Serve: Remove from heat, garnish with fresh parsley, basil, and lemon slices, and serve immediately for a delicious and comforting meal.
