Description
Delicious Oreo Cheesecake Bars featuring a chocolate chip cookie crust, a creamy cheesecake layer studded with Oreo cookies, and topped with caramel drizzle. Perfectly rich and indulgent dessert bars with a luscious texture and sweet cookie crunch.
Ingredients
Crust
- 1 (16.5-oz.) log refrigerated chocolate chip cookie dough (such as Pillsbury)
- 20 Oreo cookies, plus more for topping
Cheesecake Layer
- 2 (8-oz.) blocks cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon pure vanilla extract
- Pinch of kosher salt
Topping
- Warm caramel, for drizzling
Instructions
- Preheat and prepare pan: Preheat your oven to 325°F (163°C). Line an 8" x 8" baking dish with parchment paper, leaving about a 2" overhang on the sides for easy removal later.
- Press cookie dough for crust: Press the entire log of refrigerated chocolate chip cookie dough evenly into the bottom of the prepared baking dish to form the crust layer.
- Add Oreo layer: Arrange a single layer of Oreo cookies over the cookie dough crust, breaking cookies into pieces as needed to fit the pan evenly.
- Prepare cheesecake filling: In a medium bowl, use a handheld or stand mixer fitted with a paddle attachment to beat the softened cream cheese until smooth. Gradually add granulated sugar, then beat in the eggs, vanilla extract, and a pinch of kosher salt until the mixture is fully combined and creamy.
- Assemble cheesecake layer: Pour the cream cheese mixture evenly over the Oreo cookie layer and smooth the top with a spatula.
- Top with Oreos and bake: Sprinkle additional broken Oreo pieces evenly over the cheesecake layer. Bake in the preheated oven for 30 to 35 minutes, or until the center is just slightly jiggly but mostly set.
- Chill: Remove from oven and refrigerate the cheesecake bars until completely chilled, at least 3 hours or preferably overnight to set properly.
- Slice and serve: Use the parchment overhang to carefully lift the cheesecake bars out of the pan. Slice into 9 squares and drizzle with warm caramel sauce just before serving for an extra indulgent touch.
Notes
- Make sure the cream cheese is fully softened to avoid lumps in the cheesecake layer.
- Chilling overnight ensures the bars set well and slice cleanly.
- Use full-fat cream cheese for the best creamy texture and flavor.
- The warm caramel drizzle adds a delicious sweet contrast but can be omitted if preferred.
- Store leftovers covered in the refrigerator for up to 4 days.
