Description
A wholesome and nourishing peanut butter oatmeal recipe that combines creamy oats with the natural sweetness of banana and the nutritious boost of chia seeds and cinnamon. Perfect for a quick, comforting breakfast that is both filling and delicious.
Ingredients
Oatmeal Base
- 1 cup old fashioned rolled oats
- 3 cups water (or non-dairy milk or a blend of both)
- pinch sea salt
- 1 teaspoon cinnamon
Mix-Ins and Toppings
- 1 banana (sliced)
- 1 tablespoon chia seeds
- 2 tablespoons peanut butter
- Optional: additional banana slices, chia seeds, non-dairy milk, or maple syrup for serving
Instructions
- Combine Ingredients: Add the rolled oats, sliced banana, chia seeds, cinnamon, and sea salt into a pot. Pour in the water or non-dairy milk or a mix of both, then stir thoroughly to combine all ingredients evenly.
- Cook Oatmeal: Place the pot over medium-high heat and cook for 8 to 10 minutes. Stir frequently to prevent sticking and ensure the banana slices integrate smoothly into the oatmeal without clumping the chia seeds. Continue cooking until all the liquid has been absorbed and the oats become thick and fluffy.
- Serve: Divide the cooked oatmeal evenly between two bowls. Top each serving with a tablespoon of peanut butter, extra banana slices, and a sprinkle of chia seeds. If desired, add a splash of non-dairy milk and drizzle maple syrup on top for extra sweetness before serving.
Notes
- Stirring while cooking is essential to prevent chia seeds from clumping and to evenly distribute the banana slices.
- Using non-dairy milk instead of water will create a creamier texture.
- Maple syrup can be added for additional sweetness if preferred.
- To make this recipe vegan and gluten-free, ensure oats are certified gluten-free and use plant-based milk.
