Description

This Peanut Butter Granola recipe combines the rich creaminess of salted natural peanut butter with the sweetness of honey and the crunch of roasted peanuts. Baked to a perfect golden brown, this homemade granola is a delightful, crispy treat that’s perfect for breakfast, snacks, or topping yogurt and salads. With simple ingredients and straightforward steps, you can make a large batch of flavorful granola that’s both satisfying and nutritious.

Ingredients

Wet Ingredients

  • ½ cup salted natural peanut butter (fresh and runny)
  • ½ cup honey
  • 2 Tbsp olive oil
  • 2 tsp vanilla extract
  • ¼ tsp salt (optional)

Dry Ingredients

  • 3 cups old fashioned oats
  • ½ cup dry roasted and lightly salted peanuts

Instructions

  1. Preheat Oven: Position the oven rack to the middle and preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper to prevent sticking and set aside.
  2. Combine Ingredients: In a large mixing bowl, add the peanut butter, honey, olive oil, vanilla extract, and optional salt. Stir until well combined. Then, add the oats and dry roasted peanuts, stirring until all the oats are evenly moistened with the wet mixture.
  3. Spread Mixture: Transfer the granola mixture onto the prepared baking sheet. Use a spatula to spread it into a thin, even layer across the pan. This ensures even baking and a crisp texture throughout.
  4. Bake and Flip: Bake the granola for 12 minutes. Afterward, remove from the oven and use a spatula to flip the granola gently, pressing it back down into an even layer. Return to the oven and bake for another 8-12 minutes until the granola turns a medium golden brown color. Check doneness by cooling a small chunk; if it hardens as it cools, it’s ready.
  5. Cool and Store: Let the granola cool completely in the pan for 30 to 60 minutes without disturbing it. Once cooled, break into chunks of your preferred size and enjoy. Store in an airtight container to maintain freshness.

Notes

  • Using parchment paper helps prevent sticking and makes cleanup easier.
  • Make sure to spread the granola into a thin layer for optimal crispness.
  • Flipping the granola halfway through baking ensures even browning and crunch.
  • Allowing granola to cool completely before breaking it apart helps it harden properly.
  • You can customize this granola by adding dried fruits or seeds after baking.
