Description

These Peanut-Caramel Bars with Chocolate are a decadent no-bake treat combining crunchy tea biscuits, rich chocolate ganache, sticky caramel, and roasted peanuts, all coated in smooth melted chocolate. Perfectly portioned into 18 bars, they offer a delightful mix of textures and flavors for any chocolate lover.

Ingredients

Chocolate Ganache

  • 60 ml heavy cream
  • 200 g milk chocolate, broken into pieces

Base

  • 125 g tea biscuits, crushed into small pieces

Peanut-Caramel Layer

  • 100 g roasted peanuts, roughly chopped
  • 225 g caramel

Chocolate Coating

  • 300 g chocolate (for melting and coating)

Instructions

  1. Make the Chocolate Ganache: Heat the 60 ml of heavy cream until just below boiling point. Remove from heat, add 200 g of milk chocolate pieces, and let sit for 1 minute. Stir gently until smooth and creamy. Allow the ganache to cool completely.
  2. Prepare the Base: Crush the tea biscuits into small pieces and place them in a large mixing bowl. Add the cooled chocolate ganache and mix thoroughly until combined into a uniform mixture.
  3. Form the Base Layer: Line a tray with parchment paper. Spread the chocolate biscuit mixture evenly across the tray and press down firmly. Use cling film to smooth and level the surface, then set aside.
  4. Chop Peanuts: Pulse the roasted peanuts in a food processor briefly to roughly chop them without turning to powder.
  5. Mix Peanut-Caramel: Place the chopped peanuts into a bowl, add the caramel, and mix until well combined.
  6. Spread Peanut-Caramel Layer: Evenly spread the peanut-caramel mixture over the prepared cookie base. Cover and refrigerate until the mixture is set and firm.
  7. Cut into Bars: Once firm, cut the layered mixture into approximately 18 equal-sized bars.
  8. Melt Coating Chocolate: Set up a double boiler by filling a saucepan with about 2 cm of water and bringing it to a boil. Place a heatproof bowl with 300 g of chocolate over the saucepan, ensuring the bowl doesn’t touch the water. Stir the chocolate as it melts until smooth.
  9. Coat Bars in Chocolate: Dip each peanut-caramel bar into the melted chocolate, fully coating each piece.
  10. Set the Bars: Place the coated bars on a wire rack or baking tray lined with parchment paper. Allow the chocolate to harden completely at room temperature.
  11. Optional Decoration: For an elegant finish, drizzle additional melted chocolate over the set bars as decoration.

Notes

  • For best results, use quality chocolate for ganache and coating for smooth texture and rich flavor.
  • Ensure the ganache is fully cooled before mixing with crushed biscuits to avoid melting them.
  • Refrigerate firmly to help with clean cutting and better chocolate coating adherence.
  • Store bars in an airtight container at room temperature or refrigerated in warm climates.
  • Use parchment paper to prevent sticking and make clean removal easier.
