Description
Fluffy and flavorful pecan pancakes with a hint of cinnamon, perfect for a cozy breakfast. Made with buttermilk and studded with crunchy chopped pecans, these pancakes are lightly sweetened with maple syrup and cooked to golden perfection on a griddle.
Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon fine sea salt
Wet Ingredients
- 1 3/4 cups buttermilk (plus more as needed)
- 2 eggs
- 2 tablespoons maple syrup
- 4 tablespoons butter (melted and cooled)
Add-ins
- 1 cup chopped pecans
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined. Set aside.
- Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and maple syrup until smooth and evenly mixed.
- Combine Wet and Dry: Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Stir gently until just blended; it’s okay if the batter is a bit lumpy. Fold in the chopped pecans. Let the batter rest while you preheat your griddle to medium heat (about 350°F).
- Prepare to Cook: Once the griddle is hot, stir the melted, cooled butter into the batter to add richness and moisture.
- Cook Pancakes: Pour batter onto the griddle using a small measuring cup for even-sized pancakes. Cook until bubbles start to form on top and the edges look dry, about 2-3 minutes. Flip the pancakes carefully and cook for another 1-2 minutes until the other side is golden brown.
- Serve Warm: Repeat with the remaining batter. Serve pancakes warm with your favorite toppings such as syrup, butter, or fresh fruit.
Notes
- Letting the batter rest helps achieve fluffier pancakes by allowing the baking powder to activate.
- If batter is too thick, add a little more buttermilk to reach your desired consistency.
- Use a non-stick griddle or lightly grease your cooking surface to prevent sticking.
- Chopped pecans can be toasted beforehand for extra flavor.
- These pancakes freeze well; reheat in a toaster or oven for a quick breakfast.
