Description

This easy rotisserie chicken recipe features a whole chicken seasoned with simple spices and cooked on an outdoor grill with a rotisserie attachment. Basting with a flavorful butter mixture throughout cooking results in crispy, golden skin and moist, tender meat. Perfect as a main dish served with sides like French fries or coleslaw, this classic dish is sure to please any family.

Ingredients

Chicken

  • 1 (3 pound) whole chicken
  • 1 pinch salt (for cavity)

Seasoning & Butter Mixture

  • 1 tablespoon salt
  • 1 tablespoon ground paprika
  • ¼ tablespoon ground black pepper
  • ¼ cup butter, melted

Instructions

  1. Prepare the Grill: Preheat your outdoor grill for high heat and lightly oil the grill grate to prevent sticking.
  2. Season the Chicken: Season the chicken cavity with a pinch of salt. Tie the legs and wings securely with kitchen string to ensure even cooking on the rotisserie.
  3. Secure the Chicken: Attach the whole chicken onto the rotisserie spit securely, making sure it is balanced for smooth rotation.
  4. Start Cooking: Place the rotisserie attachment over the preheated grill and cook the chicken for 10 minutes on high heat.
  5. Prepare Butter Baste: In a small bowl, quickly mix melted butter with salt, ground paprika, and black pepper.
  6. Baste and Continue Cooking: Lower the grill heat to medium, baste the chicken generously with the butter mixture. Close the grill lid and continue cooking the chicken over medium heat, basting occasionally.
  7. Check for Doneness: Cook until the internal temperature of the chicken reaches 180°F (83°C), about 1 to 1½ hours depending on your grill. The skin should be crispy and golden.
  8. Rest the Chicken: Remove the chicken from the rotisserie and let it rest for 10 to 15 minutes before carving to allow juices to redistribute.

Notes

  • Make sure the chicken is securely tied to rotate evenly and cook thoroughly.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature.
  • Adjust basting frequency based on how quickly the skin is browning to avoid burning.
  • Allowing the chicken to rest after cooking keeps the meat moist and flavorful.
