Description

This Pizza Pot Pie recipe offers a fun and delicious twist on traditional pizza by baking all your favorite pizza toppings and cheeses inside individual ramekins covered with a golden pizza dough crust. Perfect for a comforting, personal-sized meal that combines gooey cheese, savory sauce, and a crispy crust baked to perfection in the oven.

Ingredients

Pizza Base

  • 1 large pizza dough crust (enough for 4 small pot pies)

Cheese

  • 8 slices mozzarella cheese (not fresh, cut into halves)
  • 4 slices Provolone cheese

Sauce

  • 1 cup pizza sauce

Toppings

  • Additional pizza toppings as desired (pepperoni, mushrooms, bell peppers, olives, etc.)

Other

  • Baking spray for ramekins

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it's hot and ready for baking your pizza pot pies.
  2. Prepare Ramekins: Spray four 10-ounce oven-safe ramekins thoroughly with baking spray, coating inside and the outer sides. Place the ramekins on a baking sheet for easy handling.
  3. Layer Cheese: Arrange the mozzarella cheese slices inside each ramekin by placing the short ends into the center, forming the base layer of cheese evenly.
  4. Add Sauce: Spoon 2 tablespoons of pizza sauce on top of the mozzarella cheese layer inside each ramekin, spreading slightly.
  5. Add Toppings: If using, add your choice of additional pizza toppings carefully into each ramekin, avoiding overfilling to allow room for the crust.
  6. Extra Sauce: Optionally, add an additional 2 tablespoons of pizza sauce over the toppings for extra flavor and moisture.
  7. Top Cheese: Place one slice of Provolone cheese on top of the filling in each ramekin to create a melty, savory topping.
  8. Prepare Dough: Divide your pizza dough into four equal portions. Stretch each piece into a circle that is approximately 1 to 1 1/2 inches larger in diameter than the ramekin to properly cover and seal.
  9. Cover Ramekins: Place each stretched dough circle over the filled ramekins, gently pressing the dough around the rim to seal the filling inside.
  10. Bake: Place the baking sheet with ramekins into the preheated oven and bake for 15 to 25 minutes until the dough is golden brown and cooked through.
  11. Invert and Serve: Remove ramekins from the oven and carefully invert each ramekin onto a serving plate, so the crust is on top and the filling is visible underneath.
  12. Remove Ramekins: Gently remove the ramekin from the upside-down pot pie. If it sticks, run a knife around the dough's edge and use tongs to assist. Serve hot and enjoy your personal pizza pot pie.

Notes

  • You can customize the fillings with your favorite pizza toppings like pepperoni, mushrooms, or bell peppers.
  • Be careful not to overfill the ramekins to prevent leakage during baking.
  • Using pre-shredded or sliced low-moisture mozzarella works best to prevent excess moisture.
  • Running a knife around the dough before removing ramekins helps release the crust without tearing.
  • These pot pies can be made ahead and refrigerated before baking; just add a few extra minutes to bake time if baking from cold.
