Description

Refreshing and naturally sweetened Prickly Pear Lemonade combines the unique flavor of prickly pear fruit with a zesty lemon twist. This vibrant beverage is easy to make and perfect for a quick, hydrating treat on warm days.

Ingredients

Fruit and Liquid

  • 2 prickly pears
  • Juice of 1 ½ lemons
  • 4 cups water

Sweetener

  • ½ tablespoon Nectevia (natural sweetener)

Serving

  • Ice
  • Lemon wedge for garnish

Instructions

  1. Prepare the Prickly Pears: Wash the prickly pears thoroughly. Cut off both ends of each fruit, then make a slit along the middle and carefully cut through it.
  2. Extract the Flesh: Scoop out the flesh from each prickly pear using a spoon or a knife, removing the skin completely.
  3. Blend the Fruit: Place the prickly pear flesh into a blender along with 1 cup of water. Blend until smooth to create a puree.
  4. Strain the Puree: Pour the blended mixture through a fine strainer to remove the seeds, extracting a smooth prickly pear juice.
  5. Mix the Lemonade: Add the lemon juice, Nectevia sweetener, and the remaining 3 cups of water to the prickly pear puree. Stir thoroughly to combine all ingredients evenly.
  6. Serve: Pour the prickly pear lemonade over ice cubes in serving glasses. Garnish each glass with a lemon wedge.
  7. Enjoy: Refresh yourself with this deliciously sweet and tangy prickly pear lemonade.

Notes

  • Ensure prickly pears are handled carefully as their skin can have tiny spines; washing and peeling properly is important.
  • Nectevia can be substituted with other natural sweeteners like honey or agave syrup according to taste preferences.
  • Straining the puree is necessary for a smooth drink free of seeds and pulp.
  • This lemonade can be chilled in the refrigerator before serving for an extra refreshing experience.
