Description

This Pumpkin Baked Oatmeal recipe is a cozy and nutritious breakfast option perfect for fall or any time you crave a warm, comforting meal. Made with rolled oats, pumpkin puree, and warming pumpkin spice, this baked oatmeal is naturally sweetened with maple syrup or honey. It’s easy to prepare, gluten-free when using certified oats, and can be adapted for dairy-free or egg-free diets. Baked to golden perfection, it offers a tender yet firm texture that pairs wonderfully with toppings like yogurt, fresh fruit, or nuts.

Ingredients

Dry Ingredients

  • 2 cups rolled oats (use certified gluten free if needed)
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 ¼ cup milk of choice (works great with almond milk for dairy-free)
  • 2 large eggs (can substitute flax eggs for egg-free)
  • 2 teaspoons vanilla extract
  • ⅓ cup maple syrup or honey

Additional

  • Olive oil or avocado oil (for greasing)
  • Chocolate chips, nuts, raisins, or topping of choice (optional)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish lightly with olive oil or avocado oil to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, combine the rolled oats, pumpkin spice, baking powder, and salt. Stir these together until evenly mixed.
  3. Add wet ingredients: To the same bowl, add the pumpkin puree, milk, eggs, vanilla extract, and maple syrup or honey. Mix thoroughly until all ingredients are well incorporated into a uniform batter.
  4. Assemble and bake: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly. Place in the oven and bake for 30 to 35 minutes. The oatmeal is done when the edges are puffed up, the center is set, and the top turns golden brown.
  5. Cool and serve: Remove from oven and allow to cool for 5 minutes before slicing. The baked oatmeal will be soft initially but will firm up as it cools. Serve warm with toppings like yogurt, additional milk, a drizzle of honey or maple syrup, fruit, or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

  • Use certified gluten-free oats if you require a gluten-free meal.
  • Substitute flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water per egg) for an egg-free version.
  • Choose your favorite milk, such as almond, oat, or dairy milk, to suit dietary needs.
  • Experiment with mix-ins like chocolate chips, nuts, or dried fruits for added texture and flavor.
  • For best texture, do not use pumpkin pie filling as it contains added sugars and spices.
  • Always allow the baked oatmeal to cool slightly before slicing to achieve clean cuts and firmer texture.
