Description

This Raspberry Swirl Brioche Loaf is a delightful, tender bread infused with a luscious raspberry jam swirl and a subtle lemon zest for brightness. Perfectly soft and enriched with butter and eggs, this brioche is elevated by a glossy sugar glaze that adds a tangy-sweet finish. Ideal for breakfast, brunch, or an afternoon treat, it offers a beautiful balance of rich, buttery dough and fruity sweetness baked to golden perfection.

Ingredients

Dough Ingredients

  • 3 ¼ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ½ cup warm milk (about 110°F)
  • 4 tbsp unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional, for a bright flavor)

Raspberry Filling

  • 1 cup raspberry preserves or jam
  • 1 tbsp cornstarch (to thicken the jam)
  • 2 tbsp water

For Baking & Glaze

  • 1 tbsp butter, melted (for brushing)
  • ¾ cup powdered sugar
  • 1-2 tbsp lemon juice (for a tangy finish)
  • 1 tbsp milk or cream

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk with a pinch of sugar and sprinkle the yeast on top. Let it sit for 5-10 minutes until it becomes frothy, indicating the yeast is active.
  2. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, and salt evenly.
  3. Combine Wet Ingredients: Add the activated yeast mixture, softened butter, eggs, vanilla extract, and optional lemon zest to the dry ingredients. Stir until a rough dough forms.
  4. Knead the Dough: Transfer the dough to a floured surface and knead for 10-12 minutes until smooth and elastic. Add flour as needed if the dough feels sticky.
  5. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours or until it doubles in size.
  6. Prepare the Raspberry Filling: While the dough rises, combine raspberry jam, cornstarch, and water in a small saucepan. Heat over medium-low, stirring frequently until thickened slightly. Remove from heat and allow it to cool.
  7. Roll Out the Dough: Once risen, gently punch down the dough and roll it out into a 10 by 15-inch rectangle on a floured surface.
  8. Spread the Filling: Evenly spread the cooled raspberry filling over the dough, leaving a ½-inch border around the edges to prevent spillage.
  9. Roll and Twist: Starting from the long side, roll the dough tightly into a log. Slice the log lengthwise in half to reveal the layers, then twist the two halves together with cut sides facing up to create a swirl effect.
  10. Second Rise: Place the twisted dough into a greased 9x5-inch loaf pan. Cover and let it rise again for 30-40 minutes until puffed.
  11. Preheat Oven: While the dough is rising, preheat your oven to 350°F (175°C).
  12. Bake the Loaf: Brush the top with melted butter, bake for 35-40 minutes until golden brown. If browning too fast, cover with foil for last 10 minutes to prevent burning.
  13. Cool: Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  14. Make the Glaze (Optional): Whisk together powdered sugar, lemon juice, and milk or cream until smooth. Drizzle over the cooled loaf for a tangy and sweet finish.

Notes

  • Ensure milk is warm but not hot to avoid killing the yeast.
  • For best results, use high-quality raspberry preserves with visible fruit bits.
  • Kneading the dough properly is key to a light, fluffy brioche texture.
  • If you prefer a more pronounced lemon flavor, increase the lemon zest slightly.
  • Covering the loaf with foil midway through baking prevents over-browning while allowing the interior to bake thoroughly.
  • The glaze is optional but adds a delightful tangy-sweet contrast.
