If you’re on the lookout for a vibrant, wholesome dish that brings a burst of flavors and textures to your table, this Red Lentil Pancakes with Zucchini, Vegan Yogurt, and Chutney Recipe is the one to try. These golden-red pancakes are beautifully soft, infused with fragrant spices, and paired perfectly with the fresh zucchini sauté and creamy vegan yogurt. The addition of tangy chutney adds a wonderful zing that lifts every bite, making this recipe a memorable crowd-pleaser for breakfast, lunch, or a light dinner.

Ingredients You'll Need

A round white plate holds a large bunch of fresh green cilantro with leafy textures on the top right. Next to it on the right side of the plate is a whole dark green zucchini with a smooth surface. On the left side of the plate are three white bowls: one filled with orange split lentils, another smaller bowl containing four different powdered spices in brown, red, yellow, and green shades, and the smallest bowl with a creamy light beige sauce. A halved green lime is placed near the bottom center of the plate beside a beige piece of ginger root with a rough texture. The magic of this recipe lies in its simplicity and how each ingredient plays a special role. From the earthy red lentils providing protein and a vibrant hue, to the subtle spices that awaken the palate, every component works together in harmony to create an irresistibly balanced dish.

  • Red split lentils (165 g / 1 cup): Soaked overnight to soften perfectly and form the pancake base.
  • Salt (scant 1 tsp): Enhances the flavors without overpowering the dish.
  • Baking powder (½ tsp): Gives the pancakes a légère lift and light texture.
  • Chickpea flour (1½ tsp): Adds a delicate nutty flavor and helps bind the batter.
  • Optional spices (1 teaspoon each of cumin, turmeric, coriander, and ½ teaspoon ground chili powder): Infuse warm, aromatic notes and a hint of heat.
  • Optional garlic and ginger: Introduce a fresh, zesty punch for extra depth.
  • Vegetable oil: For frying the pancakes so they get that crisp outside and tender inside.
  • Mild olive oil (15 ml / 1 tbsp): Perfect for sautéing zucchini with a subtle fruity flavor.
  • Zucchinis (2, thinly sliced): Adds moisture, color, and a soft charred bite that complements the pancakes.
  • Salt and garam masala (½ tsp): Season the zucchini with aromatic Indian spices for richness.
  • Vegan yogurt or cream: Brings cooling creaminess to balance the spices.
  • Chutney (store-bought): I love using tomato and chili chutney to introduce a sweet-spicy contrast.
  • Cilantro (small bunch, chopped): Fresh herbaceous brightness right on top.
  • For homemade cashew cream (optional): Soaked raw cashews provide a luscious, citrusy alternative topping using lime zest, juice, salt, and pepper.

How to Make Red Lentil Pancakes with Zucchini, Vegan Yogurt, and Chutney Recipe

Step 1: Prepare the Lentil Batter

Start by draining and rinsing your soaked red split lentils well. Pop them into a blender with salt, baking powder, chickpea flour, and any optional spices you like. Add around 1¼ cups of water (less if you're skipping garlic or ginger). Blitz everything until you get a smooth, pourable batter with a slightly thick consistency—thicker than a crepe batter, but still runny enough to spread.

Step 2: Sauté the Zucchini

Heat the mild olive oil in a frying pan and toss in those thin zucchini slices. Cook them gently until they turn translucent and get little charred spots that give a smoky richness. Season at the end with salt and a sprinkle of garam masala to really elevate those simple veggies.

Step 3: Cook the Pancakes

Bring a non-stick pan to a moderate heat and lightly brush it with vegetable oil. Pour about a quarter of your batter and spread it gently into a circular pancake that's a bit thicker than a crepe. Cook for approximately 3 minutes on one side until golden, then flip carefully and cook for another 2 minutes. Avoid overcooking to keep them moist and tender.

Step 4: Keep Warm and Repeat

Stack the cooked pancakes in a warm oven to keep them soft and cozy while you prepare the rest. This step ensures a lovely texture when serving.

Step 5: Assemble Your Pancakes

Now the best part. Layer the sautéed zucchini atop each pancake, dollop vegan yogurt or your homemade cashew cream generously, add a spoonful of your favorite chutney, and finish with heaps of fresh chopped cilantro for a burst of green freshness.

Step 6: (Optional) Make Homemade Cashew Cream

For a creamy, tangy topping, blend soaked cashews, lime zest and juice, salt, pepper, and a splash of water until ultra smooth. This luxurious cream adds that extra touch of indulgence and pairs beautifully with the pancakes and chutney.

How to Serve Red Lentil Pancakes with Zucchini, Vegan Yogurt, and Chutney Recipe

Four golden brown pancakes with a slightly uneven round shape are stacked on a white plate. Each pancake shows a textured surface with small holes and some darker brown spots, especially on the upper three layers, giving a crispy look. The edges are a bit wavy and slightly darker than the center. The plate sits on a white marbled surface, and the overall lighting is soft and natural. photo taken with an iphone --ar 4:5 --v 7

Garnishes

Fresh cilantro sprinkled on top is a must—it adds vibrant color and a refreshing herbal note that brightens the whole dish. You can also include a few extra spoonfuls of vegan yogurt or cashew cream right on the side for creamy indulgence.

Side Dishes

This recipe shines as a stand-alone light meal but pairs wonderfully with a crisp green salad or spiced lentil dal if you’re after a heartier spread. Roasted vegetables or pickled onions can add extra texture and zing to your plate.

Creative Ways to Present

Try rolling these pancakes like wraps or folding them into burrito-style bundles filled with zucchini, chutney, and vegan creamy goodness for easy eating at picnics or lunchboxes. For an impressive party appetizer, cut the pancakes into bite-sized triangles and serve with chutney dips and fresh herb sprigs on platter trays.

Make Ahead and Storage

Storing Leftovers

Cool the pancakes completely and stack them separated by parchment paper to prevent sticking. Store in an airtight container in the fridge for up to 3 days. The zucchini can be kept separately to avoid sogginess.

Freezing

You can freeze cooked pancakes by placing them in a single layer on a baking sheet until frozen solid, then transfer to a freezer-safe container or bag for up to 1 month. Thaw overnight in the fridge or warm gently in a skillet.

Reheating

Reheat pancakes in a non-stick pan over low heat to crisp the edges without drying them out. Avoid microwaving, as they tend to become rubbery. Rewarm the zucchini gently on the stovetop for fresh taste and texture.

FAQs

Can I skip soaking the red lentils overnight?

Soaking the red lentils helps them blend smoothly and aids digestion, but if you’re short on time, rinse them well and soak for at least 1-2 hours. Using dry lentils will result in a grainier texture and may need more water.

Is it necessary to add chickpea flour?

Chickpea flour is a great binder that supports the lentil batter and adds a subtle nuttiness, but you can omit it if you prefer a gluten-free option—just be cautious with the consistency and add a pinch extra baking powder if needed.

Can I use other vegetables instead of zucchini?

Absolutely! Thinly sliced carrots, bell peppers, or spinach lightly sautéed with spices would all be delicious alternatives, giving you a fun way to mix up the recipe depending on what’s fresh in your kitchen.

What chutneys pair best with these pancakes?

Tomato and chili chutney is my favorite for a balance of sweet, spicy, and tangy, but mango, mint, or tamarind chutneys also complement beautifully. Feel free to experiment to find your perfect match.

How can I make this recipe oil-free?

You can sauté the zucchini in a small amount of water or vegetable broth instead of oil. For frying pancakes, use a well-seasoned non-stick pan or a tiny brush of oil to reduce fat while keeping them from sticking.

Description

Delicious and nutritious red lentil pancakes made from soaked red split lentils, flavored with spices and served with sautéed zucchini, vegan cream, chutney, and fresh coriander. These pancakes are a perfect gluten-free and vegetarian option for a wholesome meal.

Ingredients

Pancakes Batter

  • 165 g / 1 cup red split lentils, soaked overnight
  • Scant 1 tsp salt
  • ½ tsp baking powder
  • 1½ tsp chickpea flour
  • OPTIONAL: 1 teaspoon each cumin, turmeric, coriander and ½ teaspoon ground chilli powder
  • OPTIONAL: 1 garlic clove and thick slice of ginger

For Sautéed Zucchini

  • 15 ml / 1 tablespoon mild olive oil
  • 2 zucchinis, sliced thinly
  • Salt, to season
  • ½ tsp garam masala

To Serve

  • Vegan yoghurt or vegan cream
  • Shop-bought chutney (tomato and chilli recommended)
  • Small bunch of coriander / cilantro, chopped

Homemade Cashew Cream (Optional)

  • 70 g / ½ cup raw cashews, soaked overnight
  • ½ lime, zest and juice (about 2 tbsp)
  • Salt and pepper, to taste
  • About 60 ml / ¼ cup water

Instructions

  1. Prepare Lentils: Drain and rinse the soaked red split lentils thoroughly to remove excess water and any impurities.
  2. Make the Batter: Place the lentils in a blender along with salt, baking powder, chickpea flour, optional spices (cumin, turmeric, coriander, chilli powder), optional garlic and ginger, and about 300 ml (1¼ cups) of water. Blend until the batter is smooth and pourable but slightly thicker than crepe batter; add a bit more water if too thick.
  3. Sauté Zucchini: Heat 1 tablespoon mild olive oil in a stainless steel frying pan. Add thinly sliced zucchini and toss to coat in the oil. Sauté frequently stirring until zucchini is translucent and slightly charred. Season with salt and garam masala, then set aside.
  4. Heat Pan: Warm a non-stick pan on low-medium heat and lightly brush it with about 1 teaspoon vegetable oil using a silicone brush to prevent sticking.
  5. Cook Pancakes: Pour a quarter of the batter into the hot pan and spread in a circular motion with the back of a spoon forming a slightly thicker pancake than a crepe. Cook for about 3 minutes on one side until set, then carefully flip and cook another 2 minutes on the opposite side. Avoid overcooking to prevent dryness.
  6. Keep Warm: Place cooked pancakes stacked in a warm oven while preparing the remaining batter.
  7. Serve: Fill pancakes with sautéed zucchini, dollops of vegan cream or yoghurt, your favorite chutney, and sprinkle with fresh chopped coriander or cilantro.
  8. Make Cashew Cream (Optional): In a small blender, combine drained soaked cashews, lime zest and juice, salt, pepper, and about 60 ml water. Blend until smooth and creamy. Adjust water quantity to achieve desired consistency. Double the quantity if using a standard blender.
