Perfect for summer gatherings and patriotic celebrations, this recipe combines a creamy texture with beautiful colors and a classic graham crust.
Ingredients
Crust
- 300 grams graham cracker crumbs (approximately 2 ½ cups)
- 1 stick unsalted butter, melted
Cheesecake Filling
- 750 grams cream cheese, at room temperature (3 bricks)
- 200 grams white granulated sugar (approximately 1 cup)
- 1 ½ tablespoons cornstarch
- 1 cup whipping cream
- 3 large eggs, room temperature
- Blue food coloring
- Red food coloring
Instructions
- Preheat and Prepare Crust: Preheat your oven to 325°F (163°C). In a small mixing bowl, combine the graham cracker crumbs and melted butter, mixing until evenly combined. Press this mixture firmly into the bottom of a springform pan to form the crust. Bake the crust for 10 minutes, then remove from the oven and set aside to cool.
- Lower Oven Temperature: Reduce the oven temperature to 300°F (149°C) in preparation for baking the cheesecake.
- Mix Cream Cheese and Sugar: In a large bowl, place the room temperature cream cheese and granulated sugar. Using a hand mixer, beat on medium speed until the mixture is smooth and creamy, ensuring no lumps remain.
- Add Cornstarch: Add the cornstarch to the cream cheese mixture and gently mix on low speed until well combined and smooth.
- Incorporate Whipping Cream: Pour in the whipping cream and continue mixing on low speed until the mixture is fully blended and creamy.
- Add Eggs: Add the eggs one at a time, beating slowly just until each egg is incorporated to avoid overmixing. Scrape down the sides of the bowl after all eggs are added and beat until the batter is smooth.
- Divide and Color Batter: Divide the cheesecake batter evenly into three separate bowls. Mix blue food coloring into one bowl until you reach the desired shade. Repeat with red food coloring in the second bowl. Leave the third bowl white.
- Prepare Pan for Water Bath: Wrap the springform pan tightly with aluminum foil to prevent water from seeping into the batter during baking.
- Layer the Cheesecake: Pour the blue batter onto the prepared crust and spread it flat, leaving about an inch of space from the edges. Next, carefully pour the white batter starting in the center over the blue layer and spread similarly—the layers will naturally spread due to their weight. Repeat pouring and spreading with the red batter on top.
- Bake in Water Bath: Place the wrapped springform pan inside a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan to create a water bath. Bake for 1 hour and 40 minutes at 300°F (149°C).
- Initial Cooling: After baking, turn off the oven and slightly open the oven door. Leave the cheesecake inside to rest for an additional 30 minutes to gently cool.
- Remove and Cool: Take the cheesecake out of the oven and let it sit at room temperature for 2 hours.
- Chill: Refrigerate the cheesecake for at least 2 hours or preferably overnight to fully set and develop its texture.
- Serve: Remove the cheesecake from the springform pan. Optionally garnish with whipped cream and sprinkles before slicing and serving.
Notes
- Removing the cheesecake from the oven too early can cause cracks due to rapid temperature changes; allow gradual cooling as instructed.
- Store the cheesecake in the refrigerator, tightly covered, for up to 5 days to maintain freshness.
- Pre-baking the crust is essential to prevent it from falling apart and to keep it crisp.
