Description

Celebrate with a festive Red, White, & Blue Poke Cake featuring a moist white cake infused with vibrant red and blue jello flavors. This easy-to-make dessert is perfect for patriotic holidays or any special occasion, topped with light whipped topping and colorful sprinkles for a fun finish.

Ingredients

Cake

  • 1 white cake mix (plus ingredients listed on the box: 1 cup water, ½ cup oil, 3 eggs)

Jello Mixtures

  • 1 3 oz package red jello
  • 1 3 oz package blue jello
  • 2 cups boiling water (divided)
  • 1 cup cold water (divided)

Topping

  • 1 8 oz tub whipped topping (thawed)
  • ¼ cup powdered sugar
  • Sprinkles, for decoration

Instructions

  1. Bake the Cake: Prepare the white cake mix according to the package instructions, combining 1 cup water, ½ cup oil, and 3 eggs. Pour into a baking pan and bake as directed. Allow the cake to cool completely for at least 30 minutes.
  2. Make Poke Holes: Use the end of a wooden spoon to poke holes all over the cake, about ½ to ¾ the depth of the cake, being careful not to poke through the bottom.
  3. Dissolve Red Jello: In a small bowl or large measuring cup, dissolve the red jello powder in 1 cup boiling water. Stir until fully dissolved, then add ½ cup cold water and mix well.
  4. Dissolve Blue Jello: In a separate bowl or measuring cup, dissolve the blue jello powder in 1 cup boiling water. Stir until dissolved, then add ½ cup cold water and mix.
  5. Fill Poke Holes: Carefully pour the red and blue jello mixtures into alternating holes in the cake. Pour gently to avoid mixing the colors and turning the mixture purple.
  6. Chill the Cake: Cover the cake and refrigerate for at least 2 hours to allow the jello to set and infuse the cake.
  7. Prepare Whipped Topping: In a medium bowl, whisk together the thawed whipped topping and powdered sugar until combined and smooth.
  8. Decorate the Cake: Spread the sweetened whipped topping evenly over the chilled cake. Sprinkle colorful sprinkles on top for a festive touch.

Notes

  • Use a wooden spoon handle to ensure uniform holes without damaging the cake structure.
  • Pour jello slowly to keep colors vibrant and separate.
  • Allow adequate chilling time for the jello to fully set to maximize flavor infusion.
  • Whipped topping can be substituted with homemade whipped cream for a fresher taste.
  • The cake mix can be substituted with homemade white cake recipe if desired.
  • For a stronger jello flavor, let the cake chill overnight.
