Description

This Rhubarb Jam recipe is a simple, quick method to transform fresh rhubarb into a tangy and sweet homemade jam. Perfect for spreading on toast or adding to desserts, this easy-to-make jam requires minimal ingredients and little hands-on time, resulting in a delightful preserve with a perfect balance of tartness and sweetness.

Ingredients

Ingredients

  • 1 Tbsp water
  • 3 cups (300 g) sliced rhubarb
  • 1/8 tsp salt
  • 1 1/4 cups (250 g) granulated sugar

Instructions

  1. Prepare the freezer plate: Place a small plate in the freezer. You'll use this chilled plate later to test the jam's doneness and consistency.
  2. Combine ingredients and start cooking: In a wide pot or pan over medium heat, add water, sliced rhubarb, salt, and sugar in that order. Avoid stirring at this stage. Wait until the mixture starts sizzling and then let it simmer for about 3 minutes without stirring, allowing liquid to collect at the pan’s bottom.
  3. Stir and simmer: After about 3 minutes, give the mixture a gentle stir. Adjust the heat to maintain a rapid simmer and continue cooking for about 12 more minutes, stirring occasionally to prevent sticking and encourage even cooking.
  4. Check jam consistency: When the jam has thickened noticeably and foam has reduced significantly, test for doneness. Spoon a small amount onto the frozen plate and let it cool for a moment. Move it around gently to feel the texture. The set texture on the plate will be the texture when chilled in the fridge, so use this test to decide if it’s done to your liking.

Notes

  • Do not stir the jam during the initial few minutes of cooking; this helps prevent the sugar from crystallizing.
  • Use the frozen plate test to judge jam consistency accurately.
  • You can adjust cooking time slightly depending on how thick or runny you prefer your jam.
  • Store jam in sterilized jars and refrigerate after cooling.
  • If you want a smoother jam, you can mash rhubarb slightly before cooking or use an immersion blender after cooking, but this recipe keeps rhubarb pieces intact.
