Ingredients
Brownie Base
- 1 cup unsalted butter
- 1/2 cup dark cocoa powder
- 4 large eggs
- 2 cups granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon table salt
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking powder
Topping
- 4 cups shredded sweetened coconut
- 1 (13.4 ounce) can Dulce de Leche
Chocolate Drizzle
- 1 cup dark chocolate melting wafers or chocolate chips
Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Spray a 9x13 inch baking pan with nonstick baking spray to ensure the brownies don’t stick.
- Melt Butter and Combine Cocoa: In a medium saucepan, melt the unsalted butter over low heat. Once melted, stir in the dark cocoa powder until fully combined. Set this chocolate mixture aside to cool slightly.
- Beat Eggs and Sugar: In a large mixing bowl, beat the eggs and granulated sugar together until the mixture becomes light and foamy. Add the vanilla extract for flavor.
- Incorporate Chocolate Mixture: Gradually stir about 1/4 cup of the warm butter and cocoa mixture into the egg mixture to temper it, stirring constantly. Then add the remaining chocolate mixture and blend well.
- Add Dry Ingredients: Sift together the all-purpose flour, baking powder, and salt. Gently fold these dry ingredients into the wet mixture, being careful not to overmix to keep the brownies tender.
- Bake Brownies: Pour the batter evenly into the prepared pan, spreading it smooth. Bake for 28-32 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and transfer the pan to a wire rack to cool completely.
- Toast Coconut: Spread the shredded sweetened coconut evenly on a baking sheet. Place it in the oven at 350°F and bake for about 5 minutes, stirring every 1-2 minutes, until the coconut is lightly toasted. Remove and allow to cool, stirring occasionally to prevent clumping.
- Combine Coconut and Dulce de Leche: In a bowl, mix the toasted coconut with the entire can of Dulce de Leche until well blended. Spread this mixture evenly over the cooled brownie layer.
- Cut Brownies: Cut the brownies into 15 to 24 squares, depending on desired serving size.
- Melt Chocolate for Drizzle: Place the dark chocolate melting wafers or chocolate chips in a microwave-safe bowl. Microwave on 50% power for 30 seconds, stir, and continue heating in 15-30 second intervals, stirring until fully melted and smooth. Be careful not to overheat.
- Drizzle Chocolate and Set: Spoon the melted chocolate into a plastic bag and snip off a small corner. Drizzle the chocolate over the top of the coconut layer on the brownies. Allow the chocolate to set before serving.
Notes
- Ensure the brownies are completely cool before spreading the coconut and dulce de leche topping to prevent melting and sliding.
- Adjust toasting time for the coconut based on your oven to avoid burning; it should be lightly golden and fragrant.
- Use good quality dark cocoa powder and chocolate for the richest flavor.
- Store leftover brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- To speed up chocolate melting, stir frequently and use short microwaving intervals.
