Ingredients
Chicken
- 3 packs pasture-raised chicken drumsticks (about 13-15 drumsticks)
Seasoning & Oil
- 3-4 tablespoons extra virgin olive oil
- 2 teaspoons sea salt
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 2 teaspoons oregano
- 1 teaspoon paprika
- 1 teaspoon ground pepper
Instructions
- Preheat the oven: Set your oven to 420 degrees Fahrenheit to ensure it reaches the perfect temperature for a crispy finish.
- Prepare the drumsticks: Pat all drumsticks dry with a paper towel to remove excess moisture, which helps achieve crispiness. Place them in a large mixing bowl.
- Season the chicken: Make sure the chicken skin is properly positioned covering each drumstick without folds. Drizzle the olive oil over the drumsticks and toss to coat evenly. Add sea salt, garlic powder, chili powder, oregano, paprika, and ground pepper, mixing well until each drumstick is fully seasoned.
- Arrange on baking rack: Spray a baking sheet and a rack with oil to prevent sticking. Place the rack on top of the baking sheet to allow air circulation. Arrange all drumsticks on the rack in a single layer.
- Bake the drumsticks: Place the baking sheet with drumsticks in the oven and bake for 35 minutes. Remove the sheet and carefully flip each drumstick to promote even cooking. Return to the oven and bake for an additional 15 minutes until the skin is golden and crispy.
- Serve and store: Once crispy and cooked through, remove from the oven and serve immediately. Leftover drumsticks can be stored in an airtight container in the refrigerator for 3 to 4 days.
Notes
- Patting the chicken dry is key to achieving crispy skin.
- Using a rack on the baking sheet helps air circulate around the drumsticks for even cooking.
- Adjust chili powder quantity to taste if you prefer more or less heat.
- Leftovers keep well refrigerated and can be reheated in the oven to maintain crispiness.
