Description

This vibrant and refreshing Sesame Soba Noodles recipe features tender soba noodles tossed in a flavorful homemade sesame dressing, paired with fresh avocado slices, crisp snap peas, edamame, watermelon radish, and fresh mint leaves. Perfect for a light, nutritious meal ready in just 20 minutes.

Ingredients

Dressing

  • ¼ cup rice vinegar
  • 2 tablespoons tamari (plus more for serving)
  • ½ teaspoon toasted sesame oil (plus more for serving)
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove (grated)
  • ½ teaspoon maple syrup or honey

Main Ingredients

  • 6 ounces soba noodles
  • 1 lemon wedge (for squeezing)
  • 2 avocados (sliced)
  • 2 cups blanched snap peas
  • ¼ cup edamame
  • 1 watermelon radish or 2 red radishes (very thinly sliced)
  • ¼ cup fresh mint leaves
  • Sesame seeds, for garnish

Instructions

  1. Make the dressing: In a small bowl, whisk together the rice vinegar, tamari, toasted sesame oil, grated fresh ginger, grated garlic clove, and maple syrup or honey until well combined. Set the dressing aside to allow the flavors to meld.
  2. Cook the soba noodles: Bring a large pot of unsalted water to a rolling boil. Add the soba noodles and cook according to the package instructions, usually about 5 to 7 minutes, until tender but still firm to the bite. Drain the noodles and immediately rinse them under cold water thoroughly to remove excess starch and prevent clumping.
  3. Toss noodles with dressing: In a large bowl, combine the cooled soba noodles with the prepared sesame dressing, tossing gently to coat all noodles evenly.
  4. Prepare the bowls: Divide the dressed noodles into 2 serving bowls. Squeeze fresh lemon juice over the avocado slices to prevent browning and add them to the bowls along with blanched snap peas, edamame, thinly sliced watermelon radish, and fresh mint leaves.
  5. Garnish and serve: Sprinkle sesame seeds over the top for a nutty crunch. Optionally, drizzle additional tamari or toasted sesame oil over the bowls for an extra burst of flavor. Serve immediately and enjoy this fresh, wholesome dish.

Notes

  • Rinsing soba noodles in cold water after cooking is essential to remove starch and prevent them from sticking together.
  • Use gluten-free tamari if you need a gluten-free version of this recipe.
  • Adjust the sweetness in the dressing by using maple syrup or honey, depending on preference.
  • Blanch snap peas briefly in boiling water before adding to retain their bright color and crispness.
  • Watermelon radish can be substituted with regular red radishes if unavailable.
