Description

These Sesame–Date Crystal Bites are a wholesome, no-bake snack combining the natural sweetness of Medjool dates with crunchy almonds, cashews, chia seeds, toasted sesame seeds, and coconut. Perfect for a quick energy boost, they offer a delightful texture and rich flavor profile while being simple to prepare in just 15 minutes.

Ingredients

Dry Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1 tablespoon chia seeds
  • 3 tablespoons toasted sesame seeds
  • 1/4 cup unsweetened shredded coconut
  • Pinch of sea salt

Flavoring

  • 1 teaspoon vanilla extract

Instructions

  1. Toast Sesame Seeds: In a dry skillet over medium heat, toast the sesame seeds for about 2 minutes until they become fragrant. Remove from heat and set aside to cool.
  2. Blend Base Ingredients: Place the pitted Medjool dates, raw almonds, and raw cashews into a food processor. Blend until the mixture forms a sticky, cohesive dough.
  3. Add Additional Ingredients: Add the chia seeds, unsweetened shredded coconut, vanilla extract, and a pinch of sea salt to the food processor. Pulse the mixture until all ingredients are well combined.
  4. Prepare Tray: Line a tray with parchment paper to place your crystal bites on once formed.
  5. Form Balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls by hand. If the dough feels too sticky, chill it briefly to make rolling easier.
  6. Coat with Sesame Seeds: Roll each ball in the toasted sesame seeds until they are fully coated to add extra texture and flavor.
  7. Chill Bites: Place the coated bites on the prepared tray and refrigerate for at least 15 minutes to allow them to firm up.
  8. Serve: Enjoy these energy-boosting crystal bites chilled or at room temperature as a nutritious snack.

Notes

  • Use Medjool dates for their natural sweetness and soft texture.
  • If dates are dry, soak them in warm water for 10 minutes then drain before use.
  • Chilling the dough helps in easier rolling if the mixture is too sticky.
  • Store the bites in an airtight container in the refrigerator for up to one week.
  • These bites are naturally gluten-free, vegan, and free from added sugars.
