Ingredients
Main Ingredients
- 3 cups water
- 1 ½ cups uncooked white rice
- 4 tablespoons vegetable oil
- 1 cup fresh bean sprouts
- ½ cup chopped onion
- 1 ½ cups cooked medium shrimp, peeled and deveined without tail
- 2 large eggs, beaten
- ¼ cup chopped green onion
- 4 tablespoons soy sauce
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon sesame oil
Instructions
- Prepare Rice: Bring 3 cups of water to a boil in a saucepan. Add 1 ½ cups of uncooked white rice, stir once, then reduce the heat to low. Cover and let the rice simmer for 20 minutes until fully cooked. Remove from heat and let it cool completely before proceeding.
- Cook Vegetables: Heat a large skillet or wok over medium-high heat for 2 minutes. Add 4 tablespoons of vegetable oil, followed by 1 cup of fresh bean sprouts and ½ cup chopped onion. Stir well and cook for about 3 minutes until vegetables are tender but still crisp.
- Add Rice and Shrimp: Add the cooled cooked rice and 1 ½ cups cooked shrimp to the skillet with the vegetables. Cook for 3 minutes, stirring constantly to combine and heat through evenly.
- Incorporate Eggs and Seasonings: Pour in 2 beaten eggs, ¼ cup chopped green onions, 4 tablespoons soy sauce, 1 teaspoon salt, ¼ teaspoon ground black pepper, and ¼ teaspoon sesame oil. Continuously stir and cook for 4 minutes until the eggs are fully cooked and the flavors are blended throughout the fried rice.
Notes
- Using leftover cooked and cooled rice is recommended for easier preparation and better texture.
- adjust soy sauce quantity to taste or dietary sodium requirements.
- You can substitute medium shrimp with other seafood or chicken if preferred.
- For a healthier option, use brown rice instead of white rice.
- Maintain constant stirring when adding eggs to avoid curdling and ensure even cooking.
