Description

This Slow Cooker BBQ Chicken recipe is an easy, flavorful dish perfect for busy days. Tender boneless, skinless chicken breasts are slow-cooked in a tangy, sweet barbecue sauce with grated onion, olive oil, Worcestershire sauce, and brown sugar. The result is juicy, shred-ready chicken coated in delicious homemade BBQ sauce, ideal for sandwiches, salads, or as a main dish.

Ingredients

Chicken

  • 3 lbs boneless, skinless chicken breasts

BBQ Sauce

  • 1 1/2 cups BBQ Sauce (Sweet Baby Ray's Honey BBQ recommended)
  • 1/2 medium onion, grated with juice
  • 1 Tbsp olive oil
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

Instructions

  1. Prepare the sauce: In a 5-6 quart slow cooker, stir together the BBQ sauce, grated onion with juice, olive oil, Worcestershire sauce, and brown sugar until well combined to create the flavorful cooking sauce.
  2. Add the chicken: Place the boneless, skinless chicken breasts into the slow cooker and turn them in the sauce to ensure they are well coated on all sides. Cover the slow cooker.
  3. Cook the chicken: Cook on high heat for 2 to 3 hours or on low heat for 6 to 7 hours. Check earlier if using smaller chicken pieces or a smaller batch. The chicken is done when it reaches an internal temperature of 165°F and shreds easily with a fork.
  4. Shred the chicken: Remove the cooked chicken breasts onto a cutting board and shred them using two forks into bite-sized pieces for easy mixing.
  5. Combine and serve: Return the shredded chicken to the slow cooker and stir thoroughly to coat all the chicken with the delicious BBQ sauce before serving.

Notes

  • Check the chicken temperature early to avoid overcooking, especially if using smaller pieces.
