Ingredients
Beef
- 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp olive oil (optional, for searing)
Potatoes
- 1.5 lbs baby potatoes or Yukon Gold potatoes, halved or quartered if large
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Garlic Butter Sauce
- 4 tbsp unsalted butter, melted
- 6 cloves garlic, minced
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
- 1/2 cup beef broth
- 1 tbsp Worcestershire sauce
Optional Garnish
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese
Instructions
- Season the beef: Pat the beef cubes dry with paper towels to remove excess moisture. Season evenly with salt, black pepper, garlic powder, and smoked paprika for a flavorful crust.
- Sear the beef (optional): Heat olive oil in a skillet over medium-high heat. Sear the beef cubes in batches for about 1-2 minutes per side until browned. This step adds extra depth of flavor but can be skipped to save time.
- Prepare potatoes: In a large bowl, toss the halved or quartered baby potatoes with olive oil, salt, and black pepper to coat them well.
- Make garlic butter sauce: In a small bowl, whisk together the melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce until combined.
- Assemble in slow cooker: Layer the seasoned potatoes at the bottom of the slow cooker. Place the beef bites evenly over the potatoes. Pour the garlic butter sauce evenly over all the ingredients.
- Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef and potatoes are tender and fork-ready.
- Garnish and serve: Sprinkle the cooked dish with chopped fresh parsley and grated Parmesan cheese if using. Serve warm alongside crusty bread or a green salad for a complete meal.
Notes
- Searing the beef is optional but recommended for extra flavor and color.
- Use fresh herbs if available for a brighter flavor, but dried herbs work well too.
- Adjust cooking times based on your slow cooker model and desired tenderness.
- If using larger potatoes, cut them smaller to ensure even cooking.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
