Description

Delicious and comforting Slow Cooker Honey Garlic Chicken Noodles with tender shredded chicken and savory honey garlic sauce, combined with fresh lo mein noodles. This easy set-and-forget recipe is perfect for a flavorful weeknight dinner.

Ingredients

Sauce and Chicken

  • 1/3 cup honey
  • 1/4 cup lower-sodium soy sauce
  • 6 medium garlic cloves, minced
  • 2 tablespoons dark soy sauce or soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon Sriracha chile sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon kosher salt
  • 1 1/2 pounds boneless, skinless chicken thighs

Thickening and Garnish

  • 2 tablespoons tap water
  • 1 tablespoon cornstarch
  • 16 ounces fresh lo mein noodles, cooked according to package directions
  • 3 large (1/2-ounce each) scallions, thinly sliced, plus more for garnish
  • White sesame seeds

Instructions

  1. Prepare Sauce Mixture: Gather all the ingredients. In a 6-quart slow cooker, stir together honey, lower-sodium soy sauce, minced garlic, dark soy sauce, oyster sauce, Sriracha, Shaoxing wine, grated fresh ginger, toasted sesame oil, and kosher salt until well combined.
  2. Add Chicken: Place the boneless, skinless chicken thighs in a single layer into the honey garlic sauce mixture in the slow cooker.
  3. Slow Cook Chicken: Cover and cook the chicken until tender, approximately 3 hours on HIGH or 5 hours on LOW setting.
  4. Prepare Thickening Slurry: In a small bowl, mix tap water and cornstarch until smooth to create the thickening slurry.
  5. Shred Chicken: Carefully transfer the cooked chicken from the slow cooker to a cutting board and shred it thoroughly with a fork.
  6. Thicken Sauce: Turn the slow cooker to HIGH and stir in the cornstarch slurry. Stir continuously until the sauce slightly thickens, about 30 seconds, then turn off the slow cooker.
  7. Combine Noodles and Chicken: Return the shredded chicken to the slow cooker along with the cooked lo mein noodles and sliced scallions. Toss everything together to coat the noodles evenly with the sauce.
  8. Serve: Divide the honey garlic chicken noodle mixture evenly among six serving bowls. Garnish generously with additional sliced scallions and white sesame seeds before serving.

Notes

  • Use fresh lo mein noodles for the best texture; cook according to package instructions before adding to slow cooker.
  • Shaoxing wine can be substituted with dry sherry if unavailable.
  • Adjust Sriracha to taste depending on desired spice level.
  • For a gluten-free version, substitute soy sauce and oyster sauce with gluten-free alternatives.
  • Leftovers store well in the refrigerator for up to 3 days; reheat gently to avoid drying out the noodles.
