Ingredients
Sausage and Vegetables
- 1 pound ground breakfast sausage
- 1 pound gold potatoes, washed and diced into bite-sized pieces
- 16 oz frozen corn kernels
Seasonings and Broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 4 cups vegetable broth (or chicken broth)
Thickener and Cream
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1/4 cup water (for mixing with flour)
Instructions
- Brown the Sausage: In a skillet over medium-high heat (or in a multi-cooker with a sauté function), cook the ground breakfast sausage until fully browned and no longer pink. Drain any excess grease to reduce fat content and set aside.
- Prepare the Potatoes: Wash the gold potatoes thoroughly and dice them into bite-sized pieces to ensure even cooking and easy eating. Add these diced potatoes to the slow cooker.
- Add Sausage and Corn: Transfer the cooked sausage into the slow cooker along with the frozen corn kernels, distributing ingredients evenly.
- Season and Add Broth: Sprinkle in the garlic powder, onion powder, dried thyme, and salt. Pour in the 4 cups of vegetable or chicken broth to create the soup base.
- Make and Add Flour Slurry: In a small bowl, whisk together the flour and 1/4 cup water until smooth to create a slurry. Pour this mixture into the slow cooker and stir all ingredients well to combine and start thickening the chowder.
- Cook the Chowder: Cover the slow cooker and cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the potatoes are tender when pierced with a fork.
- Finish with Cream: Stir in the heavy cream to add richness and silkiness to the chowder. Let it heat through for another 15 minutes with the lid off to blend flavors and slightly thicken the chowder.
Notes
- You can substitute chicken broth for vegetable broth if preferred for a slightly different flavor.
- To reduce fat, use turkey sausage or lean sausage varieties.
- Adding chopped celery or carrots can increase the vegetable content and add flavor.
- For a gluten-free version, replace all-purpose flour with a gluten-free flour blend or cornstarch slurry.
- Serve with crusty bread or crackers for a complete meal.
