Description

This Smoked Sausage and Potato Skillet is a hearty and flavorful one-pan meal perfect for a quick weeknight dinner. Tender baby potatoes sautéed with savory smoked sausage, sweet bell peppers, and onions are seasoned with Italian herbs and finished with a sprinkle of Parmesan and fresh parsley for a satisfying and comforting dish.

Ingredients

Vegetables

  • 1½ Pounds baby potatoes, small and quartered
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • ½ teaspoon garlic, minced

Proteins

  • 1 package smoked sausage

Seasonings and Others

  • 4 to 6 Tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • ¼ cup chicken broth
  • 2 tablespoons Parmesan, grated
  • 1 teaspoon fresh parsley, minced

Instructions

  1. Heat the oil: Heat the olive oil in a large sauté pan or skillet over medium heat until shimmering.
  2. Cook the potatoes: Add the quartered baby potatoes to the pan and season with salt and pepper. Cook over medium heat for 5 minutes without stirring, then stir and continue cooking for another 5 minutes until potatoes begin to brown and soften.
  3. Add onions: Incorporate the diced onions into the skillet, cooking for an additional 5 minutes. Add a little more olive oil if the pan looks dry, ensuring the onions soften and become translucent.
  4. Add bell pepper and garlic: Toss in the sliced red bell pepper and minced garlic, cooking for 1 minute to release their flavors without burning the garlic.
  5. Add smoked sausage: Slice or dice the smoked sausage and add it to the pan. Season everything with Italian seasoning and cook for 2 to 3 minutes, allowing the sausage to warm through and develop a bit of color.
  6. Pour chicken broth & simmer: Pour in the chicken broth and reduce the heat to medium-low. Cook uncovered for 5 minutes, letting the flavors meld and slightly deglazing the pan.
  7. Garnish and serve: Remove the skillet from heat and garnish with grated Parmesan cheese and freshly minced parsley. Serve hot for a delicious, satisfying meal.

Notes

  • You can substitute smoked sausage with kielbasa or andouille for different flavor profiles.
  • If baby potatoes are unavailable, small red or Yukon gold potatoes cut into similar sizes work well.
  • Add extra garlic or Italian seasoning to intensify the flavor if desired.
  • For a spicier dish, add crushed red pepper flakes when cooking the sausage.
  • This dish pairs well with a simple green salad or steamed vegetables for a complete meal.
