Ingredients
Rice Base
- 1.5 cups sushi rice (rinsed until water is clear)
- 2 cups water
- 1 teaspoon salt
- 3 tablespoons rice vinegar
- 1 tablespoon granulated sugar
- 1 teaspoon sesame oil
- Vegetable oil for frying (about 1/2-3/4 cup)
Spicy Tuna Topping
- 1 pound ahi tuna (sushi grade, finely chopped)
- 3 tablespoons Japanese Kewpie mayonnaise
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce (sushi and sashimi preferred)
- 2 teaspoons sesame oil
- 1-2 teaspoons lime juice (to taste)
Garnish
- Avocado (thinly sliced)
- Toasted sesame seeds
- Chives or scallions (minced)
- Jalapeño or serrano pepper (sliced)
Instructions
- Prepare the rice: Rinse the sushi rice thoroughly 4-5 times until the water runs clear to remove excess starch. Combine the rinsed rice, water, and salt in a rice cooker and cook according to the rice cooker's instructions.
- Flavor the rice: In a small bowl, mix the rice vinegar, granulated sugar, and sesame oil until the sugar dissolves. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture until evenly combined.
- Shape and chill the rice: Line a small square baking tray with plastic wrap. Transfer the flavored rice into the tray and press it firmly into a 1/2-inch-thick square block. Wrap and refrigerate for at least 1 hour or overnight. Alternatively, freeze for about 30 minutes to firm up for easy cutting.
- Cut the rice: Remove the chilled rice block from the tray and cut into bite-sized rectangular pieces suitable for frying.
- Pan-fry the rice: In a medium skillet, heat about 1/2 to 3/4 cup of vegetable oil over high heat for 30 seconds. Carefully place the rice pieces into the hot oil, spaced about 2 inches apart to avoid overcrowding. Fry on medium-high heat for about 3 minutes until golden brown on one side, then flip and cook for another 2-3 minutes until crispy and golden. Remove and drain on a wire rack set over a lined baking sheet.
- Make the spicy tuna topping: In a medium bowl, combine the finely chopped ahi tuna, Kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice. Mix well until all ingredients are thoroughly incorporated.
- Assemble the bites: Place a few thin slices of avocado on top of each crispy rice piece. Spoon 1-2 tablespoons of the spicy tuna mixture on top of the avocado. Garnish with toasted sesame seeds, minced chives or scallions, and a slice of jalapeño or serrano pepper for added heat and color.
Notes
- Use sushi-grade tuna for safety and optimal flavor, as it is consumed raw.
- Ensure the rice is well chilled and firm before cutting and frying to maintain its shape and achieve crispiness.
- Adjust the Sriracha quantity to control the spiciness of the tuna mixture.
- Can be served as an appetizer or part of a party platter.
- Leftover spicy tuna can be stored in an airtight container in the refrigerator for up to 1 day.
