Description

These Strawberry Greek Yogurt Ice Cream Sandwiches are a refreshing, light dessert perfect for warm days. Made with creamy Greek yogurt, fresh strawberries, and whipped cream, sandwiched between crunchy graham crackers, they offer a delightful balance of tartness and sweetness. Naturally lower in fat than traditional ice cream sandwiches, they make a healthier treat option for the whole family.

Ingredients

Ice Cream Mixture

  • 1 1/2 cup FAGE Total 2% Plain Greek Yogurt
  • 1 1/2 cup light Whipped Cream
  • 1 cup strawberries, diced into small pieces
  • 1/2 tsp vanilla extract
  • 1/2 to 1 Tbsp honey (optional, to taste)

Assembly

  • 8 graham crackers

Instructions

  1. Prepare the dish: Line a casserole or baking dish with parchment paper to prevent sticking and make it easier to remove the frozen mixture later.
  2. Mix the base: In a medium bowl, combine the Greek yogurt, diced strawberries, vanilla extract, and honey (if using). Stir thoroughly to evenly distribute the ingredients.
  3. Incorporate whipped cream: Gently fold the whipped cream into the yogurt mixture until fully combined, creating a light and airy texture.
  4. Assemble the sandwiches: Place half of the graham crackers evenly at the bottom of the lined dish. Spread the yogurt and strawberry mixture evenly over the graham crackers. Then layer the remaining graham crackers on top to create sandwich layers.
  5. Freeze: Place the assembled dish into the freezer for 4 to 6 hours until the mixture is fully frozen and set.
  6. Serve: Remove from the freezer and cut into squares. Let the ice cream sandwiches sit at room temperature for a few minutes to slightly soften before serving for the best texture.

Notes

  • For a vegan version, substitute Greek yogurt with coconut or almond-based yogurt and use dairy-free whipped topping.
  • Honey is optional and can be adjusted or omitted depending on your preferred sweetness level.
  • Make sure the whipped cream is light to keep the dessert airy.
  • To prevent cracking when cutting, let the dish sit at room temperature for a few minutes before slicing.
  • Fresh or frozen strawberries can be used; if using frozen, thaw and drain excess liquid.
