Description
This Mango Mochi Recipe is a simple, naturally flavored treat made with just four main ingredients, coming together quickly in the microwave. It is gluten-free, dairy-free, sugar-free, and dye-free, making it a healthy and delicious dessert option with a soft, chewy texture and a sweet, fresh mango filling.
Ingredients
Mochi Dough
- 3/4 cup full fat coconut milk
- 3/4 cup diced ripe mango*
- 3/4 cup glutinous rice flour
- Pinch sea salt
- 1/2 tablespoon avocado oil or dairy-free butter
Mochi Filling
- 1 small fresh ripe mango, peeled and diced into 3/4” cubes
Instructions
- Prepare Mango Puree: Add coconut milk and 3/4 cup diced ripe mango to a food processor and pulse until combined into a smooth puree.
- Mix Mochi Dough: In a large glass or microwave-safe bowl, combine glutinous rice flour, sea salt, and mango puree. Stir until forming a smooth, loose mixture. If too dry, add coconut milk one tablespoon at a time until smooth.
- Microwave Cooking: Cover the bowl with plastic wrap (poke holes for steam) or a microwave-safe lid with a vent. Microwave on high power for 3 minutes.
- Handle Hot Dough: Use a kitchen towel to remove the hot bowl safely. Remove cover.
- Incorporate Fat: Add avocado oil or dairy-free butter to the hot dough and mix with a spatula. The dough will be very sticky.
- Cool Dough: Let the dough cool for 5-10 minutes to handle comfortably.
- Knead and Roll Dough: Sprinkle a clean surface with glutinous rice flour, transfer dough to it, knead for 2-3 minutes until smooth. Roll dough out to about 1/2 inch thickness.
- Divide and Fill: Cut rolled dough into 6 even pieces. Place a 3/4 inch mango cube in the center of each piece.
- Seal Mochi: Fold the edges over the mango filling, pinch to seal tightly, then roll each mochi between palms to form a smooth round shape.
- Serve Fresh: Serve within 3 hours of making for best texture and freshness.
Notes
- Ripe mangoes are essential as they naturally sweeten the dough. Unripe mangoes will result in less sweetness.
- If mangoes are not sweet enough, you can add 1-2 tablespoons maple syrup to the dough for extra sweetness.
- Handle the mochi dough soon after cooking as it gets stickier as it cools.
- Keep mochi covered or refrigerated if not serving immediately, but best enjoyed fresh.
