Ingredients

Main Ingredients

  • 2 cups shredded chicken
  • ½ cup sun dried tomatoes in oil, drained and chopped
  • 2 celery stalks, diced
  • ¼ cup red onion, finely diced

Dressing Ingredients

  • ⅓ cup plain Greek yogurt
  • ⅓ cup mayonnaise
  • ¼ cup fresh basil, chopped
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prep the salad. Add the shredded chicken, chopped sun dried tomatoes, celery, and red onion to a large bowl. Set it aside to prepare the dressing.
  2. Make the citrus basil dressing. In a small bowl, thoroughly mix the Greek yogurt, mayonnaise, chopped fresh basil, minced garlic, lemon juice, salt, and black pepper until smooth and well combined.
  3. Toss. Pour the dressing over the chicken and vegetable mixture. Use a spoon or spatula to gently toss everything together until the salad is evenly coated with the dressing.
  4. Serve. Enjoy the salad immediately on its own, paired with crackers, or use it as a delicious filling for sandwiches.

Notes

  • For a healthier version, substitute mayonnaise with extra Greek yogurt or a light mayo.
  • You can use rotisserie chicken or leftover cooked chicken to save time.
  • Adjust the amount of lemon juice and garlic according to your taste preference.
  • This salad keeps well refrigerated for up to 2 days, but is best enjoyed fresh.
  • Add chopped nuts or seeds for extra crunch if desired.
