Ingredients
Shrimp and Sauce
- 2 tablespoons butter
- 1 pound medium shrimp (peeled and deveined)
- ½ cup spicy barbecue sauce or your favorite spicy store-bought sauce
Vegetables and Fruit
- 1-2 teaspoons olive oil
- 1 large red bell pepper (chopped into bite-size pieces)
- 2 cups fresh pineapple (sliced and cut bite-size) or 1 (14 ounce) can pineapple chunks, drained
- 3 green onions (sliced thin)
Instructions
- Prepare Shrimp: Rinse the shrimp and pat dry with a paper towel. In a large skillet over high heat, melt 2 tablespoons of butter. Add the shrimp in a single layer and cook without moving for about 1 minute. Flip and cook for an additional minute until shrimp turn light pink and cooked through. Remove shrimp to a plate.
- Cook Vegetables and Pineapple: Reduce heat to medium-high and add a drizzle of olive oil to the hot pan. Add the chopped red bell peppers and cook until slightly browned and just starting to soften, about 2 minutes. Add pineapple chunks and cook with the peppers for 1-2 minutes to slightly soften.
- Add Sauce and Combine: Stir in the spicy barbecue sauce and increase the heat to high. When the sauce begins to simmer, return the cooked shrimp to the pan. Toss everything together to coat well and cook for about 1 minute as the sauce thickens slightly.
- Finish and Serve: Remove the pan from heat and sprinkle sliced green onions over the dish. Serve the stir fry as is or over a bed of rice for a complete meal.
Notes
- For a milder version, reduce the amount of spicy barbecue sauce or use a milder sauce.
- Fresh pineapple adds extra sweetness and texture, but canned pineapple works well as a convenient alternative.
- Serve over steamed rice or noodles to make it more filling.
- Use medium shrimp to ensure quick and even cooking.
- You can substitute butter with all olive oil for a dairy-free option.
