Description

A delicious homemade version of Taco Bell's Grilled Cheese Burrito, featuring seasoned ground beef, chipotle sour cream, savory Spanish rice, crunchy tortilla strips, and plenty of melted cheddar jack cheese, all wrapped in a large burrito tortilla and grilled to golden perfection.

Ingredients

Beef Mixture

  • 1 lb. 85/15 ground beef
  • 1 teaspoon granulated garlic
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Chipotle Sour Cream

  • 1 cup sour cream
  • 1 tablespoon chipotle hot sauce
  • ¼ teaspoon cayenne pepper

Burrito Assembly

  • 1 cup cooked Spanish rice
  • 3 cups shredded cheddar jack cheese (divided)
  • 1 cup red tortilla strips
  • 2-3 tablespoons olive oil
  • 4 extra large burrito tortillas

Instructions

  1. Prepare the Beef: Heat a large nonstick skillet over medium heat. Add the ground beef and break it up as it cooks. Sprinkle granulated garlic, chili powder, salt, and pepper over the beef. Cook the beef with the spices for 5-7 minutes until fully cooked, then remove from heat and set aside.
  2. Make Chipotle Sour Cream: In a bowl, combine sour cream, chipotle hot sauce, and cayenne pepper. Mix well and set aside to let the flavors meld.
  3. Assemble Burritos: In a large bowl, combine ¼ pound of cooked beef, ¼ cup chipotle sour cream, ¼ cup cooked Spanish rice, ½ cup shredded cheddar jack cheese, and ¼ cup red tortilla strips. Mix the ingredients until evenly combined. Place the mixture in the center of a large burrito tortilla, fold in the sides, and roll it tightly into a burrito.
  4. Cook Burrito - First Side: Heat the nonstick skillet over medium-high heat and add 1-2 teaspoons of olive oil. Once hot and fragrant, sprinkle ¼ cup shredded cheddar jack cheese in a line along the center of the skillet. Place the assembled burrito on top of the cheese line.
  5. Press Burrito: Carefully place a heavy cast iron skillet on top of the burrito to press it. Cook for 3-4 minutes until the cheese melts and browns beneath the burrito.
  6. Flip and Cook Other Side: Remove the cast iron skillet and carefully flip the burrito to cook the opposite side. Cook for an additional 2-3 minutes until golden brown. Remove the burrito from the skillet.
  7. Repeat Cooking for Remaining Burritos: Repeat the assembly and cooking process until all four burritos are cooked.
  8. Rest and Serve: Allow the cooked burrito to rest for 1 minute before serving to let the cheese set slightly and the filling settle.

Notes

  • Use 85/15 ground beef for optimal flavor and fat content.
  • Adjust chipotle hot sauce and cayenne pepper to control the spice level.
  • Red tortilla strips add a nice crunch—tortilla chips can be used as an alternative.
  • Pressing with a cast iron skillet helps achieve the grilled cheese effect with a crispy crust.
  • Make sure to cook the beef fully and season it well for the best flavor.
