Ingredients
Potatoes
- 2 pounds russet potatoes, peeled and small diced
- 3-4 tablespoons oil
- 1 ½ teaspoons salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Ground Beef
- 1 pound ground beef
- 1 packet taco seasoning
- Water (amount called for on the back of the taco seasoning packet)
Toppings
- 8 ounce bag Mexican shredded cheese
- Optional toppings: pico de gallo, guacamole, sour cream
Instructions
- Coat Potatoes: Place the peeled and diced russet potatoes in a large bowl and drizzle with 3-4 tablespoons of oil. Toss well to ensure all potatoes are evenly coated with oil.
- Season Potatoes: Add 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder to the potatoes. Mix thoroughly until all pieces are evenly seasoned.
- Air Fry Potatoes: Preheat an air fryer to 400°F. Place the seasoned potatoes in the air fryer basket and cook for 18-20 minutes, shaking the basket 2-3 times during cooking to ensure even crisping and browning.
- Cook Ground Beef: While potatoes cook, brown and crumble 1 pound of ground beef in a skillet over medium heat until fully cooked. Drain any excess grease. Add 1 packet of taco seasoning and the recommended amount of water as per the seasoning packet instructions. Stir and cook until the sauce thickens and meat is well coated, then remove from heat.
- Assemble Dish: To serve, layer the air-fried seasoned potatoes on plates, top with the taco-seasoned ground beef, then sprinkle generously with shredded Mexican cheese. Add optional toppings such as pico de gallo, guacamole, and sour cream according to preference.
Notes
- You can customize the seasoning blend to your taste by adding chili powder or cumin for extra depth of flavor.
- If you don’t have an air fryer, you can roast the seasoned potatoes in the oven at 425°F for 25-30 minutes, tossing halfway through.
- Feel free to add other toppings like sliced jalapeños, olives, or chopped cilantro to enhance the taco flavor.
- For a lighter option, use lean ground turkey or chicken instead of beef.
