Ingredients
Main Ingredients
- 1 pound ground beef
- ½ large onion, diced
- 1 green bell pepper, diced
- 1 tablespoon tomato paste
- 1 recipe taco seasoning
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can canned sweet corn, drained and rinsed
- 1 (15-ounce) can canned diced tomatoes
- 1 (4-ounce) can canned diced green chilies
- 3 cups water
Toppings
- Avocado, sliced or diced
- Jalapeno peppers, sliced
- Cilantro, chopped
- Cotija cheese or other shredded cheese
- Sour cream
Instructions
- Cook beef: In a large pot over medium heat, cook the ground beef until browned, breaking it up with a spoon. Once cooked through, drain any excess fat from the pot to reduce greasiness.
- Cook veggies: Add the diced onion, green bell pepper, tomato paste, and taco seasoning to the pot with the browned beef. Stir well to combine and cook, stirring occasionally, until the vegetables start to soften and the tomato paste is well incorporated, about 1 to 2 minutes.
- Boil and simmer: Pour in the black beans, kidney beans, sweet corn, diced tomatoes, diced green chilies, and water. Stir everything together and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let the soup simmer gently for 20 minutes to allow the flavors to meld.
- Serve it up: Ladle the hot taco soup into bowls and offer your favorite toppings such as avocado slices, jalapeno peppers, fresh cilantro, cotija or shredded cheese, and a dollop of sour cream for a delicious, customizable meal.
Notes
- Use lean ground beef (90% lean or higher) to reduce fat content.
- For a spicier soup, add extra chopped jalapenos or a dash of hot sauce.
- Vegetarian option: substitute ground beef with plant-based meat or extra beans.
- To make homemade taco seasoning, combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper instead of using a pre-made packet.
- Feel free to add more water or broth for a thinner soup consistency.
- The soup reheats well and often tastes better the next day.
