Ingredients
Wet Ingredients
- 1/2 cup butter, softened (dairy-free or regular)
- 1 large egg
- 1/2 cup tahini
- 1 teaspoon vanilla extract
Dry Ingredients
- 2/3 cup granulated sugar
- 1/3 cup brown sugar
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Add-ins
- 1 1/2 cups dark chocolate chips
- Additional dark chocolate chips for topping (optional)
Instructions
- Combine Butter & Sugar: Add the softened butter, granulated sugar, and brown sugar into a mixing bowl or the bowl of a stand mixer. Mix together for 1 minute until the mixture is creamy and smooth.
- Add Egg, Tahini, & Vanilla: Incorporate the egg, tahini, and vanilla extract to the butter-sugar mixture. Beat for an additional 30 seconds until fully combined and smooth.
- Add Dry Ingredients: Spoon and level the flour accurately, then add the flour, baking soda, baking powder, and salt into the wet mixture. Mix carefully just until combined to avoid overworking the dough.
- Fold In Chocolate Chips: Gently fold in the dark chocolate chips to evenly distribute them throughout the dough.
- Scoop Onto Baking Sheet: Using a 2-tablespoon scoop, place cookie dough onto a baking sheet lined with parchment paper, spacing the cookies to allow for spreading. Optionally, top each cookie with additional chocolate chips for extra indulgence.
- Chill In Fridge: Refrigerate the cookie dough on the baking sheet for 30 minutes to help the cookies hold their shape and develop flavor.
- Preheat Oven: While chilling, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Bake: Bake the chilled cookies for 13-17 minutes or until the edges turn golden brown. For softer, chewier cookies, remove them from the oven early as they will firm up as they cool.
- Let Cool: Allow the cookies to cool on the baking sheet for 15 minutes before transferring them to a wire rack to cool completely.
- Enjoy: Sprinkle with flaky salt if desired and enjoy your perfectly chewy Tahini Chocolate Chip Cookies!
Notes
- For a dairy-free version, use dairy-free butter or margarine.
- Chilling the dough is important for achieving the best texture and preventing excessive spreading.
- You can swap dark chocolate chips for semi-sweet or milk chocolate chips, but dark chocolate provides a deeper flavor contrast with tahini.
- Storing cookies in an airtight container keeps them fresh for up to 5 days.
- Optional flaky salt on top enhances the sweet and nutty flavors.
