Ingredients
Dough
- 1 cup whole milk, warmed to about 115-120°F
- ½ cup granulated sugar, divided
- 1 package (2 ¼ teaspoons) active dry yeast
- 3 large eggs, room temperature
- ½ cup (1 stick) unsalted butter, melted and cooled
- 1 teaspoon vanilla essence (vanilla bean paste or extract)
- Zest of 1 lemon, about 1 tablespoon
- 4 ½ cups all-purpose flour, plus more as needed
- 1 teaspoon kosher salt
Filling
- 1 cup granulated sugar
- Zest of 1 lemon, about 1 tablespoon
- ¼ teaspoon kosher salt
- ¼ cup unsalted butter, softened
Lemon Cream Cheese Icing
- 4 ounces cream cheese (brick-style), softened
- ¼ cup unsalted butter, softened
- 1 ½ cups powdered sugar
- ¼ cup whole milk
- Zest of 1 lemon, about 1 tablespoon
Instructions
- Make the dough. In a large bowl or stand mixer, combine warm milk and 2 tablespoons of sugar. Sprinkle yeast on top and stir. Let it sit for 10-15 minutes until foamy, indicating the yeast is active.
- Add dough ingredients. Once foamy, add the remaining sugar, eggs, melted butter, vanilla essence, lemon zest, flour, and salt to the yeast mixture.
- Knead the dough. Attach the dough hook and mix on low until the dough forms, about 1-2 minutes. Increase speed to medium and knead until smooth, elastic, and supple, about 5-6 minutes. Alternatively, knead by hand on a floured surface for 10 minutes, adding flour sparingly if too sticky.
- Let dough rise. Shape the dough into a ball, place in a greased bowl, and cover with plastic wrap or kitchen towel. Let it proof in a warm place until doubled in size, about 1 ½ hours.
- Prepare filling. Combine granulated sugar, lemon zest, and salt in a bowl. Rub the zest into the sugar with your fingers to infuse the citrus aroma.
- Roll and fill dough. Punch down the risen dough to release air. On a floured surface, roll it into a 20 x 10 inch rectangle. Spread softened butter over the surface, leaving a small border. Sprinkle the lemon sugar mixture evenly over the dough.
- Shape rolls. Starting from the long side, roll the dough tightly into a log with the seam down. Pinch edges to seal. Trim the ends for even-sized rolls. Cut the log into 12 equal pieces using a sharp knife or dental floss.
- Arrange rolls to proof again. Line a 9×13-inch pan with parchment. Place rolls spaced slightly apart. Cover with plastic wrap or towel and let rest while preheating the oven to 350°F. Rolls will puff up slightly during this time.
- Bake rolls. Remove covering and bake rolls until lightly golden, about 30 minutes.
- Make lemon cream cheese icing. Beat softened cream cheese and butter until smooth. Gradually add powdered sugar, then stream in milk and lemon zest. Mix until smooth and lump-free. Set aside.
- Finish and serve. Once rolls are baked and slightly cooled, spread the lemon cream cheese icing generously over them. Garnish with extra lemon zest if desired. Serve warm for best flavor and texture.
Notes
- Ensure the milk is warmed to 115-120°F to activate the yeast without killing it.
- Use room temperature eggs and softened butter for better dough texture.
- Rolling dough evenly helps create uniform rolls for even baking.
- Letting the dough proof twice enhances flavor and creates a fluffy texture.
- You can substitute vanilla essence with vanilla extract or paste.
- For a stronger lemon flavor, add extra lemon zest to the filling or icing.
- Store leftover rolls in an airtight container at room temperature for 2 days or freeze for longer storage.
- If dough is too sticky to handle, add flour one tablespoon at a time.
