Ingredients

Tofu Nuggets

  • 2 pieces Tofu nature
  • 25 g Panko breadcrumbs
  • ½ sachet Zaatar
  • 2 tbsp Flour
  • 1 Egg
  • 2 tbsp Sunflower oil
  • Salt and pepper, to taste

Salad

  • ½ bunch Radishes
  • 1 Tomato
  • 1 piece Avocado
  • 40 g Mixed baby spinach and radicchio leaves
  • Salad greens (quantity as desired)

Sauce Blanche au Persil (White Parsley Sauce)

  • 1 pot Greek yogurt
  • 3.75 g Parsley (finely chopped)
  • ½ Lemon (juice)
  • Salt and pepper, to taste

Vinaigrette

  • 1 tsp Mustard
  • 1 tsp Honey
  • 2 tbsp Olive oil
  • Few drops Lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the tofu: Press the tofu with your palm to extract excess water, then pat dry with paper towels. Cut the tofu into sticks about 1 cm thick and 2 cm wide for even cooking.
  2. Slice the vegetables: Thinly slice the radishes and tomato. Finely chop the parsley and cut the lemon into wedges. Halve the avocado, remove the pit, and scoop out the flesh, then cut into cubes.
  3. Make the parsley sauce and vinaigrette: In a small bowl, combine a few drops of lemon juice, Greek yogurt, chopped parsley, salt, and pepper to make the parsley sauce. In a large bowl, whisk together mustard, honey, a few drops of lemon juice, and olive oil to create the vinaigrette. Season with salt and pepper.
  4. Prepare the breading stations: Set up three plates—one with the flour, one with the beaten egg, and one with the panko breadcrumbs mixed with zaatar, salt, and pepper. Coat each tofu stick by first tossing in flour, then dipping in egg, and finally coating with the seasoned panko mixture.
  5. Cook the tofu nuggets: Heat sunflower oil in a skillet over medium-high heat. Once hot, fry the tofu sticks for 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels. Lightly season with salt and pepper.
  6. Assemble the salad: Just before serving, toss the tomato slices, avocado cubes, spinach and radicchio sprouts, and radishes in the prepared vinaigrette.
  7. Serve: Plate the dressed salad alongside the crispy tofu nuggets. Serve the parsley yogurt sauce on the side for dipping the nuggets.

Notes

  • Pressing tofu well is key to getting crispy nuggets.
  • Panko breadcrumbs provide a lighter, crunchier texture.
  • Zaatar adds a fragrant, herby Middle Eastern flavor to the coating.
  • Use ripe but firm avocado to avoid mushy salad.
  • The parsley sauce complements the savory nuggets while the vinaigrette brightens the salad.
  • Serve immediately to maintain crispiness of tofu.
