Ingredients
Stuffing Ingredients
- 12 ounces bread (cut into small cubes for stuffing)
- 1/2 pound bulk mild Italian sausage
- 1 cup onion, small chopped
- 1 cup celery, small chopped
- 1 cup carrots, small chopped
- 1/2 cup butter
- 1 1/2 cups chicken stock
- 1 1/2 teaspoons poultry seasoning
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Turkey Roulade
- 1 5-pound boneless turkey breast with skin on, thawed
- Salt (for seasoning)
- Ground black pepper (for seasoning)
- Olive oil (for brushing)
- Baking string (6 pieces plus one long piece for tying roulade)
Instructions
- Make the Stuffing: In a large skillet, brown the Italian sausage, breaking it into small crumbles using a wooden spoon. Once browned, drain excess grease. Add chopped onion, celery, and carrots, cooking until tender. Stir in butter until melted, then add the cubed bread, chicken stock, and poultry seasoning. Taste and adjust salt and poultry seasoning as needed. Remove from heat and set aside.
- Prep the Oven: Preheat the oven to 375 degrees Fahrenheit.
- Prepare the Turkey Breast: Lay the boneless turkey breast flat on a surface and pat dry with paper towels. Using a sharp knife, cut into the thickest part of the breast halfway through, opening it like a book. Season the turkey inside and out with salt and black pepper.
- Stuff the Turkey: Spread about half of the prepared stuffing (approximately 2 cups) evenly over the turkey breast, leaving about one inch clear from the edges. Press down firmly to cover the surface evenly. Save the remaining stuffing for a side dish.
- Roll the Turkey Roulade: Starting from the longest edge, carefully roll the turkey breast around the stuffing, tucking the sides in to enclose the filling. Use 6 pieces of baking string plus one longer piece to tie the roulade securely, ensuring the stuffing stays inside.
- Prepare for Baking: Brush the roulade with olive oil to help skin crisp and add flavor. Place the roulade on a large sheet pan or a 9 x 14 inch baking dish.
- Bake the Roulade: Bake in the preheated oven for about 1 hour and 15 minutes. Check the internal temperature with a meat thermometer; the meat is done when it reaches 155 degrees Fahrenheit. Cooking time can vary depending on the exact size of your turkey breast.
- Rest and Serve: Remove the roulade from the oven, cover loosely with foil, and let it rest for 10 minutes before slicing. This allows juices to redistribute and ensures a moist turkey.
Notes
- Ensure the bread cubes for the stuffing are cut small to make rolling easier.
- You can use your favorite sausage variety instead of Italian sausage to customize flavor.
- Use a meat thermometer to avoid overcooking and ensure safe internal temperature.
- Letting the roulade rest after baking helps maintain juiciness when sliced.
- Save leftover stuffing for a delicious side dish alongside the roulade.
- Be sure to tie the roulade securely with kitchen string to keep the stuffing contained during baking.
