Ingredients
Bean Layer
- 1 (16-ounce) can vegetarian refried beans
Cheese Layer
- 3/4 cup Vegan Mexican Cheese Spread
- About 1/2 cup hot water (to thin cheese spread)
Guacamole
- 2 ripe avocados
- 1 medium lime, juiced
- 1 pinch sea salt
Salsa Layer
- 1 cup favorite salsa or pico de gallo
Vegetable Toppings
- 1/2 bell pepper, diced
- 3/4 cup cherry tomatoes, diced
- 1/4 cup red onion, diced
- 1/4 cup black olives, diced (optional)
- 1/4 cup fresh cilantro, chopped
- 1 handful fresh cilantro, chopped (additional for garnish, optional)
- 1 tbsp lime juice
- 1 pinch salt
- 1 pinch pepper
Instructions
- Prepare the Cheese Layer: Scoop out 3/4 cup of Vegan Mexican Cheese Spread into a bowl and whisk in about 1/2 cup of very hot water, stirring well until the mixture reaches a smooth, queso-like consistency. Adjust water amount if needed for desired thickness.
- Make the Guacamole: In a separate bowl, mash the ripe avocados thoroughly. Add the juice of one medium lime and a pinch of sea salt, mixing well. Taste and adjust seasoning if desired.
- Prepare the Salsa or Pico de Gallo: Use your favorite salsa or prepare fresh pico de gallo by combining diced cherry tomatoes, red onion, lime juice, salt, pepper, and chopped cilantro. Mix well and set aside.
- Assemble the Dip: Spread the vegetarian refried beans evenly as the first layer in a serving dish. Carefully layer the prepared vegan cheese spread on top. Next, spread the guacamole layer followed by the salsa or pico de gallo. Sprinkle diced bell pepper, black olives (if using), and fresh cilantro evenly over the top to finish.
- Serve or Store: Serve the dip immediately with tortilla chips or fresh vegetables. Alternatively, cover tightly and refrigerate for up to one day to let flavors meld before serving.
Notes
- For a thicker cheese layer, reduce the amount of hot water added to the cheese spread.
- The dip can be assembled up to 1 day in advance and stored refrigerated to enhance the flavor melding.
- Black olives and cilantro are optional toppings—feel free to omit or substitute based on preference.
- Use fresh, ripe avocados for the best guacamole texture and flavor.
- If you prefer, use a store-bought vegan queso or cheese sauce to save time.
