Ingredients
Wrap
- 4 large tortillas
Filling
- 1 cup fresh spinach
- 1 recipe Tofu Scramble (prepared separately)
- ½ cup cooked black beans, drained and rinsed
- 1 roasted red bell pepper, thinly sliced
- 1 avocado, thinly sliced
- ⅓ cup pickled onions or chopped scallions
- 1 serrano or jalapeño pepper, thinly sliced
- Sea salt, to taste
- Lime wedges, for serving
- Salsa, for serving
Instructions
- Prepare Filling: Divide the fresh spinach leaves evenly among the tortillas. Layer the tofu scramble over the spinach, followed by black beans, roasted red bell peppers, sliced avocado, pickled onions or scallions, and sliced serrano or jalapeño peppers. Season the fillings with a sprinkle of sea salt and a squeeze of fresh lime juice to brighten the flavors.
- Assemble Burrito: Fold the left and right sides of each tortilla over the filling. Then, fold the bottom flap of the burrito up and over the filling. Tuck in the sides while rolling the burrito tightly to secure the ingredients inside.
- Serve: Wrap each burrito in foil for easy handling, slice if desired, and serve alongside fresh salsa and additional lime wedges for a zesty finish.
Notes
- The tofu scramble should be prepared separately; it typically includes crumbled tofu cooked with your choice of seasonings and vegetables.
- Feel free to substitute black beans with pinto beans or kidney beans for variety.
- Pickled onions can be replaced with fresh chopped scallions if pickling is not preferred.
- Serrano or jalapeño peppers can be omitted or adjusted according to your spice preference.
- For added creaminess, consider adding a vegan cheese or cashew cream inside the burrito.
