Description

This Vegan Cajun Risotto is a creamy, flavorful dish combining classic risotto creaminess with bold Cajun spices. Made with arborio rice, fresh vegetables, kidney beans, and aromatic herbs, it's a comforting and nutritious plant-based meal perfect for a quick weeknight dinner or a satisfying lunch.

Ingredients

Vegetables and Aromatics

  • 1 large red onion, diced
  • 1 red bell pepper, diced
  • 3 celery stalks, diced
  • 1 tablespoon fresh thyme

Spices and Seasoning

  • 2 tablespoons Cajun seasoning
  • 1 teaspoon onion granules
  • 1 teaspoon garlic granules
  • Salt and freshly ground black pepper to taste

Main Ingredients

  • 1 tablespoon olive oil
  • 250 g (8.8 oz) arborio rice
  • 1 x 400 g (14 oz) can chopped tomatoes
  • 1 x 400 g (14 oz) can red kidney beans, drained and rinsed
  • 750 ml (3 cups) vegetable stock

Instructions

  1. Sauté Vegetables: Heat the olive oil in a large, deep pan over medium heat. Add the diced red onion, red bell pepper, and celery. Fry them gently for 4-5 minutes until softened and fragrant.
  2. Add Spices: Stir in the Cajun seasoning, onion granules, and garlic granules. Continue to cook for another minute, stirring often to evenly distribute the flavors.
  3. Toast the Rice: Add the arborio rice to the pan and toast it for 1-2 minutes, stirring frequently to coat the grains with the spices and oil.
  4. Add Tomatoes and Beans: Pour in the canned chopped tomatoes and drained kidney beans. Stir well to combine all ingredients.
  5. Simmer with Stock (First Half): Pour in half of the vegetable stock, increase the heat and bring the mixture to a simmer. Then reduce the heat to low and let it gently simmer, stirring often, until most of the liquid has been absorbed.
  6. Simmer with Stock (Second Half): Add the remaining vegetable stock and continue cooking at a low simmer, stirring frequently, until the arborio rice is cooked al dente and the risotto has a creamy consistency. Most of the liquid should be absorbed.
  7. Finish and Serve: Stir in the fresh thyme and season with salt and freshly ground black pepper to taste. Serve immediately while warm and creamy.

Notes

  • For a richer flavor, you can add a splash of vegan butter or nutritional yeast before serving.
  • Use fresh Cajun seasoning or adjust the amount to your spice tolerance.
  • Stirring often helps release the starch from the rice, which contributes to the creamy texture of the risotto.
  • If needed, you can keep the risotto warm by covering it and letting it stand off the heat for a few minutes before serving.
