Description

This Vegan Cordon Bleu is a delicious plant-based twist on the classic French dish, featuring a flavorful chickpea and oat flour patty layered with vegan deli slices and cheese, then breaded and pan-fried to golden perfection. It's a quick, satisfying entrée ready in just 30 minutes, perfect for those seeking a comforting, dairy-free, and meat-free meal.

Ingredients

Flax Egg Mix

  • 2 tbsp flaxseed meal
  • 2 tsp no-chicken or veggie bouillon
  • 1/4 cup water (60ml)

Chickpea Patty

  • 15 oz can of chickpeas, drained and rinsed (439g)
  • 1/2 cup oat flour (30g)
  • 1 tsp poultry seasoning
  • 1/2 tsp garlic powder

Filling and Coating

  • 6 slices vegan deli slices ("ham" or "turkey")
  • 6 slices vegan cheese slices or shreds, such as Chao
  • 1/4 cup vegan butter, melted (58g)
  • 1/2 cup panko breadcrumbs (30g)
  • Thin layer of oil for pan frying

Garnish

  • Fresh parsley

Instructions

  1. Prepare Flax Egg Mixture: In a small bowl, combine the flaxseed meal, veggie bouillon, and water. Let this mixture sit for 5 minutes to thicken and mimic the binding properties of eggs.
  2. Make Chickpea Patty Mixture: While waiting, add drained chickpeas, oat flour, poultry seasoning, and garlic powder into a food processor. Pulse until a thick paste forms. Add the flaxseed mixture to the processor and pulse until everything is well combined.
  3. Chill the Mixture: Transfer the chickpea mixture to a bowl, cover it, and refrigerate for 15 minutes. This chilling step allows the oat flour to absorb moisture and the mixture to firm up for easier shaping.
  4. Shape Patties: Divide the chilled mixture into three equal portions (about 1/2 cup each). Place them onto parchment paper, roll each into a rounded cylinder, then flatten to about 1/2-inch thickness on both sides to prevent sticking.
  5. Add Vegan Ham and Cheese Layers: Trim the vegan deli slices and vegan cheese if needed. Place two layers of vegan ham and cheese strips on each chickpea slab. Roll it tightly into a log, sealing the edges and ends to keep the filling inside.
  6. Prepare for Frying: Heat a large pan over medium heat and add a thin layer of oil. Set up two shallow dishes—one with melted vegan butter and the other with panko breadcrumbs. Roll each chickpea roll first in melted butter, then coat thoroughly with breadcrumbs.
  7. Pan-Fry the Vegan Cordon Bleu: Carefully place the breaded rolls into the hot pan. Fry them for a few minutes on each side until they turn golden brown and crispy all around. Use moderate heat to ensure they cook through without burning.
  8. Serve and Garnish: Remove from pan and let cool slightly before slicing. Garnish with fresh parsley and serve with your favorite sauce or gravy for a comforting meal.

Notes

  • Use vegan deli slices and cheese that melt well for best results.
  • The oat flour helps bind the mixture and can be substituted with all-purpose flour if necessary.
  • Adjust seasoning to taste, adding more garlic powder or poultry seasoning if desired.
  • If you prefer a crispier crust, double coat the rolls by repeating the butter and breadcrumb process before frying.
  • Serve immediately for the best texture and flavor, but leftovers can be refrigerated and reheated gently.
